I recall one time when I accidentally flambed sausages in a pan. Little fire entered the pan for just 2 to 3 seconds and I gently shook it off much like how he did it in this video. However, MIL made up a story that I could have burned the house down, that I was experimenting with fire and outdoor grilling activities indoors, that there was thick black smoke and fire in the house. Lol so dramatic and far from reality. This happened years ago. Also her chimney was blackened by her daily tadkas but she took this opportunity to put the blame on me. Oh fun times. Good ol days.

What is the purpose of tilting the pan before lighting it? Won't the flames come straight up no matter the angle of the pan?
Helps to get the fire started. Tilting it gets in closer to the main source.

I have a question, is the alcohol supposed to burn because the pan is hot or is the alcohol supposed to barely touch the tip of the flame.?
The alcohol on a hot pan starts to evaporate into that cloudy mist over the pan. And alcohol is very good at fire preserving.
When the that gas or some of the alcohol in the pan catches on fire the whole cloud of it ignites.
Creating that amazing giant flame.
So yes you need just a teeny tiny touch of the alcohol gas or flame touching the inside of the pan and it all takes off into a flame right away.

I thought it's cooking using a super high eat until beyond smoking point to flash point where cooking oil will ignite fire lol, coz I ever "Flambe" my tofu by accident, I heated my cast iron skillet too hot it seemed, and when I threw another tofu in, it ignited fire, I was so surprised but it died down after a while, luckily I never cook using too much oil or it would probably grow bigger. Was so surprised but kinda felt like a pro coz I ever saw in movies pro chef cooking using flame inside the pan, but didn't know what it's called and how the process was done.

Yes, once the alcohol has burnt up the flames will burn out automatically. Flambeeing does not last very long.

True, I find the pan needs to be extremely hot though, which can often lead to burning the butter or garlic for the sauce, which is not ideal.

yeah, you can use alcohol because it will mostly cook off in the process since that is whats causing the flames. at that point its just the flavor of the drink, not the alcoholic content

@@oscarlau5002 I am hard of hearing, and I struggle with high-frequency sounds. I have to get my good ear pretty close to the pan to assess the sizzling which isn't very safe.
Watch the bubbles increase in the sauce. Once they are at a point that they are bubbling on top and looking a little foamy then you know it's ready. It should look like water right before it reaches a rolling boil. In my experience though you could just keep the fruit moving until the sauce gets plenty thick. Once that butter mixes in and heats up itll emulsify pretty quick.
Once it's sizzling you will know. You don't need to sound. Butter will look like it's boiling.
Can we flambé in non stick pan??
Wouldn't recommend, non stick doesn't do well with high heat and begins to break down.

I sincerely hate my electric stove. I do 80% of my cooking on the side burners of the outdoor grill. Everything just comes out so much better. (We have no gas in our neighborhood, so I can't do indoor gas range)
Buy an itawani ( Japanese understand heat) gas burner, put it on top of your electric stove ( if you're incapable of remembering, tape down the electric dials) under the hood. Buy a round bottomed wok ( the gas burner will hold it) wonderful!
