Today, I made a beautiful mini watermelon jelly cheesecake with watermelon as the main ingredient.
I ground whole watermelons to make jelly and put them in cake inserts.
Watermelon jelly is made with two different textures.
I added two ingredients that go well with watermelon.
One strawberry and one melon.
Melon continues to appear after the last video!
There are also ingredients that maximize the taste by connecting these ingredients.

● Cup measure standard
237 ml = 1 cup
15 ml = 1 Tbsp
5 ml = 1 tsp
1 egg (without shell) 53g
Heavy Cream (38% Milkfat)
(Chocolate is minced, flour is before sifting)
● Finished cake size (diameter 7cm sphere shape * 6 pieces)
● Watermelon juice
300g watermelon (seedless)
90 g strawberry puree
● Watermelon insert
(Mold size: 45mm, hemispherical shape, 6 pieces)
100 g watermelon juice (unstrained)
20g water
45g sugar
3ml lemon juice
6 g powdered gelatin
30 g of water
● Round watermelon jelly
(Mold size: 7cm, hemisphere shape, 6 pieces)
150g watermelon juice
65g sugar
55 g of water
12ml lemon juice
20 g powdered gelatine
100g water
● Cheesecake
(Mold size: 7cm, hemisphere shape, 6 pieces)
275g Cream cheese ( 1 cup + 4Tbsp )
55 g sugar ( 1/4 cup + 1 tsp )
5ml vanilla extract (1tsp)
1/2 Tbsp lemon juice
12g powdered gelatin ( 1 Tbsp+1/2 Tbsp )
60g water (4Tbsp)
170g heavy cream (60% whipped) (3/4 cup - before whipping)
1/2 Tbsp melon syrup
food coloring
