Today, I made a melon cake with fragrant and juicy melon.
I made a soft and fluffy melon sponge cake with melon cream and Green Apple Jelly.
The jelly stuffed in the middle was very refreshing, so it tasted even better.
Melon cake can be tasteless if it is too melon melon, so I added about two kicking point ingredients and it turned out to be a very special melon cake.
If there is no Half moon Mold...
You can also make it in the form of a roll cake.
I also glazed it with a light green color to make your eyes happy, but it is very delicious even if you freeze it in the freezer without glaze.
It feels like eating a very luxurious “Merona ice cream” wrapped in a cake~~!!
But to be exact, it tastes like something you would find in a Michelin restaurant dessert.. haha
In fact, I made this cake several times just to test it out.

1 egg (without shell) 53g
Heavy Cream (38% Milkfat)
(Chocolate is minced, flour is before sifting)
● Half moon shape cake mold (29cm*9cm*6cm)
● Melon Puree
150g melon pulp
15g sugar
● Melon sponge cake
(Mold size: 35cm*25cm)
5 egg yolks (90g)
15 g sugar (1 Tbsp)
pinch of salt
5ml vanilla extract (1Tbsp)
20g melon syrup (1Tbsp+1tsp)
45 g vegetable oil (4 Tbsp)
50g milk (3Tbsp+1tsp)
100g cake flour (2/3 cup)
5 egg whites (185g)
87g sugar (1/3 cup + 1Tbsp + 2tsp)
● Green Apple Jelly (Green Grape Jelly)
150 g (2/3 cup) hot water
30g sugar (2Tbsp+1tsp)
15 g lemon juice (1 Tbsp)
50g green apple syrup (3Tbsp+1tsp) (or green grape syrup)
16g gelatin
● Melon Mousse Cream
2 yolks
25 g sugar (2 Tbsp)
2ml vanilla extract
55g hot milk (3Tbsp+2tsp)
55g hot Heavy cream (3Tbsp+2tsp)
5 g (1 tsp) melon syrup
8 g (1 Tbsp) powdered gelatin
40g water (2Tbsp+2tsp)
80 g (1/3 cup) melon puree
1g Apple Mint
170g heavy cream (3/4 cup) - (90% whipped)
15 g sugar (1 Tbsp)

100 g (2/3 cup) white chocolate

Melon is a climbing annual plant of the genus Cucumber belonging to the Cucurbitaceae family. It has a cool texture with a lot of moisture and is popular with people for its soft and sweet flesh.
Types of melon include honeydew melon, papaya melon, musk melon, cantaloupe melon… etc. are very diverse.
I like one that has no scratches on the outside, is heavy when held by hand, has a thick and clear pattern, and has a top.
As melons grow rapidly, patterns are created by repeating cracking and healing of the surface.
Therefore, melons with a clear net are those with high sugar content.
Also, melon is a late-ripe fruit, and when you press the opposite part of the stem, it is soft and fully ripe.
It can be stored for 2-4 days in a cool, well-ventilated place.
It is best to refrigerate 3-4 hours before eating.
