Lazy Man's Broccoli Soup

    Here's the recipe:
    ingredients:
    water
    broccoli
    goat cheese
    walnuts
    salt & pepper for taste
    olive oil
    Directions:
    1. cut off florets of the broccoli.
    2. get pot of rapidly boiling water going
    3. season boiling water with sea salt
    4. drop broccoli into boiling water and season on top of the water again with sea salt.
    5. cover pot and cook for about 3 1/2 to 4 minutes. when knife goes through the broccoli with a little pressure it's done.
    6. drain broccoli but retain water for use later.
    7. cut 2 slices of goat cheese with warm knife. Feel free to dip knife into boiling water to heat it up
    8. put hot broccoli into blender and add retained water. only use about 1 cup of the retained water. pour in 1/4 cup at a time then blend. Keep adding 1/4 cups of retained water until you reach the soup consistency. Better thick than runny.
    8. Add salt if needed at this point and blend seasoning in again if necessary.
    9. place goat cheese and walnuts in an empty soup bowl.
    10. season the cheese with black pepper
    11. slowly pour the soup in one spot and let it surround the cheese/nuts.
    12. drizzle olive oil on top. 2 or 3 turns
    serve and enjoy

    Gordon actually suggests to add it in as you blend so you can achieve the desired consistancy.

    Though it is an easy recipe, goat cheese is not something I normally have in my fridge. xD

    i bought organic broccoli because it was cheap and it had bugs in it!!! people hate on pesticide too much, it is truly a blessing

    Jack, a common mistake that I've seen from others and myself, is that if you try to mix things with hot water, it tends to try to escape from the blender, and it looks like yours was starting to come out of the top on the first take. Best to put a towel over the lid, and hold it down when using this method. Personally, I would just use a stick, or emersion blender if you have one. I think I'll make this tonight. Thanks.

    Hi, This looks good! Wanted to tell you I made the lazy mans lasagna for a few parties i hosted over the holidays and what a hit! Served with garlic bread and a spinach salad. I always get stressed cooking for a crowd but not this time! I like watching your videos. Thanks!

    I've made this soup more times than I can count and its always a huge hit. Despite Gordon's protestations to the contrary, I usually use some sort of stock like vegetable or chicken. I just think it heightens the flavor and makes it taste richer. I always use my stems in this recipe. I just peel them and slice them about a 1/4" thick and they cook up just as quick as the florets and make even more soup! Since most of my friends and family don't like goat cheese(or are too cowardly to try it!) I generally opt for a flavored creme fraiche or sour cream. I've tried cream cheese before too and that works pretty well. Also, since my wife is allergic to nuts I usually substitute croutons.

    The stems and leaves of broccoli are great to eat too! I might actually try this some time, since it looks so good and healthy! Just boil the stems for 3 minutes then add the florets and leaves if they are there. Most places the leaves of course aren't included.

    When you got the second batch blended all I could think of is a smoothie. Then you said as you tried it...that you could put it into a cup and drink it.
    I did make the Portobello Burger, but without blue cheese. I decided on Swiss, but I think the blue cheese would of went well with the onions. (Those onions were amazing!) Now I just have to see if my other half will give it a try.

    Funniest thing. I was going to make my version of lazy [woman's] broccoli soup this afternoon! Mine's a little different. I use a Vitamix, and the liquids I add are (1) pot liquor (as you did), (2) chicken broth (for a little protein), and Half & Half (because cream of broccoli is better than just regular broccoli soup). Then I drop a small piece of raw onion* in the carafe and let 'er rip. I do have some goat cheese in the fridge, so I think I'll dress it up with that today just to see how I like it. Thanks for the recipe -- and for sharing your learning experiences with us. Glad to know that I'm not the only one. ;)
    *I do mean small. It's easy to get too much, so I recommend adding and then tasting and then adding again if needed.

    broccoli nutrients are H2O soluble, which means boiling it boils out vital nutrients. I suggest steaming it.

      Touchmate Kenan of course his is better. He's a chef of 20+ years and has a crew of 10 people filming him and helping him prep.

    Nice come back Jack! I'll have to watch Gordon's video now. Did you keep your Broccoli stems? Jacques Pepin says if you peel the stems they are really good and tender and they are also good in stocks. TFS Jack! :D

      Kelly Carpenter yes. I steam them and eat them. I like the stems. Just not in this recipe

    The stems have just as much flavour as the tops. Blanche the tops, but you can boil the stems in chicken stock with other veg. Add an onion and some spinach for added green goodness. Mix, then blend.
    Also, top this with blue cheese and croutons. you will not regret it.

    Hey jack this recipe sounds easy yummy. I thought that you can put more things into it ro make it taste a lot bigger like balsamic vinegar, some pieces of garlic, and even some broccoli garnish.

    Hmm the reason yours came out watery is because of the blades of the ninja blender. Gordon's blender has the blades on the bottom only, so he could stuff his blender full of broccoli. However with the ninja blender, the huge blades get into the way of stuffing it full, so you end up with too much water.

    Even if you used too much water, no big deal. You then just have to reduce the water over the stove in a pot, but that's another video.

    his blender was much thiner then yours so when he filled it half way it was a lot less water then you added at first

    Over seasoned the water and broccoli as well as the pepper at the end far to much, you shouldnt be able to taste the flavour of pepper or salt they are used.to enhance and bring out the flavour not too add additional flavours

    What about cauliflower, spinach and other greens? Is goat cheese and feta cheese the same?

      Cauliflower soup I ussualy use a cream cheese, Ive never seen a spinach or other green soup ( besides pea soup which I wouldnt add cheese to) You should just look at the veg and think hmm what kind of cheese would I like to eat with this and then add it. Goats cheese and feta isnt the same but often can be replaced by one another. Feta is more of a crumbly cheese that could be either goat or sheep milk, goats cheese is more of a soft spreadable kind of cheese.

      Cheri A. TakerFan Ever wonder what the difference between feta cheese and goat cheese is? While many people refer to feta as a goat cheese, feta actually has a higher sheep's milk content than goats' milk content. According to the regulations surrounding the official name 'feta', no more than 30% of a feta cheese's milk can come from goats; at least 70% of the milk has to be sheep's milk. If a feta cheese has more than 30% goats' milk in it, it is not, officially speaking, a feta cheese.

    You should just use the entire broccoli! so much broccoli going to waste :( You are blending it anyway so using it all shouldnt be a diffrent because it doesnt taste any diffrent. If you add the entire broccoli you can also add a little more water.
