    📋 INGREDIENTS:
    Ingredients:
    2 sweet potatoes
    1 red onion
    1 red pepper
    1 green pepper
    400 g chickpeas (14 oz)
    3-4 tbsp olive oil
    2 tsp salt
    2 tsp sweet paprika
    2 tsp caraway seeds
    black pepper
    Dressing:
    2 tbsp lemon juice
    4 tbsp tahini sesame paste
    1 tbsp maple syrup
    4 tbsp water
    Salt
    black pepper
    To serve:
    1 avocado
    Parsley
    Baking instructions:
    Bake at 200°C (about 392°F) - 30 minutes in a convection oven

    Very attractive dish. Those are not what we call green peppers in North America: ours are the same shape as the red ones and a lot darker. What you used looks like what we call cubanelle peppers, sometimes called Italian frying peppers, which are very mild and tasty.
    I would be inclined to season the vegetables after they are laid out on the tray -- seems it would be easier to make sure it all received an equal amount of the spices. They can be tossed in oil first, as you have done.
