yeah, but if you're a vegan, the white sugar you have on hand probably is. It's not Palin's focus to teach people about veganism, esp. not being one herself, and incredibly generous of her to offer vegan recipes. Most people who make this are probably not going to be full on vegan's either and the ones who are know how to select vegan ingredients that meet their personal stringincy requirements

It's fine to have no protein for topping. For this recipe, Glass noodles always be wiped out firstly. That's why many restaurants in Thailand has had "Woonsen Ob" on their menu for years. The "Woonsen Ob" recipe is exactly the same as this recipe but served with no shrimp.
