    Whenever I use dried shiitake, after soaking, draining and trimming the stems, I throw in a bit of cornflour and give them a massage. You'll see black bits come off. Give them a rinse, and this step removes the mushrooms' slight funk effectively.

    My favorite neighborhood Asian all vegan restaurant closed during the pandemic. They had an amazing clay pot rice that was served similarly but with the rice in the pot as well . I miss it . Must try this !!

Great work.....I saw your Tom yum goong video where you mix milk with shrimp soup,..but here in India (precisely Kokan region, India) food habits are very much similar to Thailand except we don't mix milk and sea food in any kind of dish....Milk and sea food are considered opposite foods to each other and hence are avoided mixing..We use coconut milk in any sea food dish....Bye the way, I love your channel, and your sense of humour is great...Sawadeeka

    Love that you’re doing vegan noodle dishes. Looks great. Just FYI, not all white sugar is vegan (depends on the brand)

      yeah, but if you're a vegan, the white sugar you have on hand probably is. It's not Palin's focus to teach people about veganism, esp. not being one herself, and incredibly generous of her to offer vegan recipes. Most people who make this are probably not going to be full on vegan's either and the ones who are know how to select vegan ingredients that meet their personal stringincy requirements

More than likely not. Now let me educate you just a little bit: That was my entire point, to let other people know the difference between plant-based and vegan diets. If a relatively well-known UA-camr who is NOT vegan starts using "vegan" in their titles, then it's important for those who are learning to understand this recipe may NOT be vegan. Otherwise, the term "plant-based" should be used, NOT vegan. Enjoy your life.

    It's fine to have no protein for topping.
    For this recipe, Glass noodles always be wiped out firstly.
    That's why many restaurants in Thailand has had "Woonsen Ob" on their menu for years.
    The "Woonsen Ob" recipe is exactly the same as this recipe but served with no shrimp.
