  • The grated green mangoes provide a refreshing sourness that balances beautifully with the aromatic spices and tempering of mustard seeds, curry leaves.Cooked rice is then mixed with this flavorful base, creating a unique and delightful blend of textures and tastes. Often garnished with roasted peanuts and fresh cilantro, we also gave a extra twist of khara boondi. Green mango rice is a popular dish in Indian cuisine, especially enjoyed during the mango season.
    Ingredients quantity
    Oil 2 tbsp
    Bengal gram 1 tbsp
    Skinned Split black gram 1 tbsp
    Peanuts ¼ cup
    Asafoetida 1 tsp
    Mustard seeds ½ tsp
    Cumin seeds 1 tsp
    Green chilli slit 5-6 no
    Curry leaves 20-25 no
    Turmeric powder 1 tsp
    Coriander powder 1 tbsp
    Black salt ½ tsp
    Salt to taste
    Green mango grated 2 no
    Basmati rice boiled 1 cup
    Fresh Coriander chopped 3 tbsp
    Fresh coconut grated ¼ cup
    Khara boondi for garnish
    Method
    1.Place kadai on medium flame and heat oil. Add Bengal gram and skinned
    split black gram and peanuts sauté until they turn golden brown.
    2.Add asafoetida, mustard seeds and cumin seeds sauté for a minute.
    3.Add green chilli slit, curry leaves, turmeric powder, coriander powder,
    black salt, salt and grated green mango mix well.
    4.Add cooked rice mix well until the rice is coated with the mango mixture.
    5.Now add chopped coriander and grated fresh coconut mix gently.
    6.Now side out in serving bowl and garnish with khara boondi.
