As for me, never use mustard. A little Avocado oil is good. Use a spray every 20 to 30 minutes to keep the meat moist. To make the spray, use Coffee, BBQ rub, Whiskey, and Spiced Rum. 1/2 cup Spiced Rum, 1/4 cup Whiskey, two scoops of coffee, two scoops BBQ rub. No Water, put coffee and BBQ rub into the coffee filter. Pour the whisky and Spiced rum into the coffee maker, then brew. After it's brewed, pour 1/4 cup of Avocado oil into the pot. let cool and put into Avocado sprayer. Make sure there's no grounds or rub in the mix or it will plug your sprayer. I have a separate small coffee maker for this that I clean after each use. Enjoy.

I appreciate all the amazing videos and prep. I have experience in cold smoking and making my own sausages and specialty meats. Well, I know what's going on my pitboss this weekend. I appreciate the breakdown of the parts of the loin, don't see enough of that kind of stuff. I usually grill chops high heat, coated with a paste made of garlic, ginger, and cumin. It'll be interesting to see how they turn out low and slow.

I love the blade end, the dark meat is left over from the loin back ribs, it stays very moist
