    Gotta try this with a local Berkshire, Duroc or Red wattle - heritage breeds make a massive differance and make up for the cost and you can make your own bacon with the heritage breeds belly sections for the ultimate version!

    Did this with two pork butts but without the bacon and loved it. My FIL even liked it and that's a feat for living next door to him for 36 years. I can't wait to do the poor man's brisket.

    I "layer" my smoke. I'll start off with apple for the longer smoke, but put a layer of maple at the top of the hopper to finish it off near the end of the cook - or using a mod, I'll put some maple wood chunks in the ash bin as the falling embers will fall down and cause those to smolder. I use a MB 800 with a pan holder mod (and various other mods), so put loin on the bottom grates with the pan underneath that.
    Other than that - it looks amazing and I'll bet it taste amazing too.

    Seasoning the meat before wrapping with bacon protects the spices from the heat. That is why your flavor is so powerful. Direct heat on spices is detrimental to the power of the spice. I wish there was a love button to hit, so I hit the Like button. I enjoy good cooking outside.

    Now you are just showing off. That looks so yummy. You are getting a lot of use from the new smoker. Can you cook this recipe in an oven?

      Sure can, that's exactly how we do the chicken recipe when not wanting to use the grill. Broiler works best to cook chicken chunks and crisp the bacon. If doing a pork loin I'd set the temperature lower.

      @@TKCL I was not bashing this guy. The pork loin looks great and i will probably try this myself but the only point I was making is "Smithfield" is a Chinese company which is a little alarming for me at least. I have no desire to eat or drink anything made by a Chinese company.

    Looks excellent. Have to try the chili powder. I usually use Cayenne pepper. Did you put that expanded metal on the grates or did it come that way? Mine just has the round grates. That’s usually an upgrade I do, put expanded metal on top of the grates.

      Mine was bought from Costco, their version comes with expanded metal. Wait until you see next week's video, huge stainless expanded metal aftermarket grates on my smoker 😍😍😍

      Negative, you want the flame going up into the charcoal. If you pull the slides the draft can pull the air/flame into the cooking chamber. This is exactly how masterbuilt explains to light it.

    Mine sits open air…. Every cover, including masterbuilt, has just gotten shredded due to continual wind

      A year later and my cover is perfect. Severe thunderstorms, hurricanes ect have not torn mine. I'm very exposed to wind.

Yeah that's the only thing I ever use when I smoke is applewood but I soak mine and tree top Apple juice it gives it more of a sweet taste plus it helps it burn slower 🤫🤫🤫 but that's not all my secrets lol

    Masterbuilt temperature probes are notoriously off 20-40 degrees. Buy a ThermoPro, or Inkbird stand alone thermometer. I've had my MB GS800 since July 2021, and the only issues I've ever had, were 'operator error'.....

      I use handheld instant read thermometers, I find my masterbuilt probes are off by roughly 7 degrees.
