My Favorite steakhouse is Lowake inn in Rowena TX just south of Ballinger I've eaten there since 1979 you can pick your steak thickness and cut they have them in a display case great west TX atmosphere. I would put there steaks up against any in TX.
Great looking steaks, all. The chicken fried steak gets gravy as well as the mashed potatoes, just sayin'. Texas guy. You can even dip the french fries in the gravy...

There are three sections to a ribeye. The ribcap, which has tons of flavor, the center (usually round) which is the leanest, and the tip.
The ribeye is one of the tastiest chunks of meat on a cow. You done good getting the steaks you did. These were worthy steaks.
The ribeye is usually the second most expensive and the second most tender cut of steak. The filet mignon (tenderloin) is the main cut. It doesn't have the flavor of a ribeye though.
It's actually very easy to cook a tomahawk properly. It's so thick that you can time it easily.
It's much harder to get a thin steak to medium rare. There's such a small window for success.
When you get back home you have to review the local places you tried before and rate them on how close them come to authentic Texas BBQ. You can give them your seal of approval.
I learned from Texas that if steak needs sauce, it wasn't done right. Truly, great steak stands on it's own.
A lot of European meat is grass fed. Which means less fat or marbling. Which means tough as leather.

When I was a child I remember European's would laugh at the thought of American culture (they'd say, "what is that Mickey Mouse?") and American cuisine (they'd say "what is that, hamburgers?") saying there are no such things. Now the world knows that American cuisine is incredibly varied and original, while our culture is world wide.

Said no European ever. The world over wanted American products. Levi’s, Marlboro, Nile, etc. in communist ussr, they traded jeans and cigs on the black market. You might have been told Europe poo pooed American items/culture, but it most certainly was the case.

I remember Europeans on American TV deriding American culture, and it happened many times. You of course are young and a victim of recency bias, but all I've said is fact.

When Mrs. H said you normally get sauces with your steaks in the UK, I was thinking "Oh no - they must not be great steaks". Glad you could try a steak that doesn't need it!
A good steak doesn’t need a sauce.
Now they know why our sauces have to be top notch.. cant have a bad one a ruin the taste of the meat itself..
Three things improve meats. Sauces, rubs, and marinades. For the steaks, the sauce is that compound butter. It compliments the flavor without overpowering it like A-1 sauce or something. If it's a bad steak you need to cover it in chemicals or just plaster it with ketchup.
Fun fact: If you ever get an Applebees Bourbon Street Steak, get a side of honey mustard. It tastes at least 50% better if you dip it. Trust me. One dip and you're hooked.

@@protorhinocerator142 I ADORE their Bourbon Street Steak. I usually get honey mustard sauce with my Ceasar salad (I know, I'm weird, but I like to mix the dressings on my salad), so I'll have to try that. Of course, that steak really needs no sauce. It's fantastic as it is.
The gravy is supposed to go on top of the chicken fried steak.

Mr. H's BITE.... Did NOT Disappoint! LOL That Tomahawk looked ridiculously amazing!!!!! So did the Ribeye, it all looked delicious!

I spent 18 mos in the UK back in 1980-81.. Steak and Pizza places were nonexistent so we have the edge there, but then when you try the Fish and Chips... Oh God... I miss it so!!! Ate it practically every night on the way home from the pub.

My family is one of the families that walked from Indianola, Tx to New Braunfels, TX and later built Fredericksburg. If you tore the history and heritage site there in Fredericksburg, you saw small cottages called Sunday houses. When I was very little, my aunt still lived in one. The ranch and family farm was too far away by wagon to make it to church every week, so they build small homes, arrived in Saturday so they could attend church in Sunday

Good God. I've watched you guys eat the best BBQ with no problem. Donuts, turkey legs, ice cream, ditto. But seeing those steaks made me enviously pantomime eating with every bite you took.

I’ve seen some tomahawk steaks for over $100 so the $70 isn’t too bad.
I prefer a thick T-Bone, you get the New York strip part and a section of the tenderloin and a way smaller bone.

Tomahawk is a Rib-eye with an extra large bone.
If a steak is cooked and seasoned properly, you don't need steak sauce.

They gave you a side of Au Jus with your Tomahawk Steak. It is not a sauce. It is an enhanced beef stock and natural juices which will not change the taste of your steak but enhance it and bring out the flavor even more. I suggested this to you in a previous video that when you eat a steak you should ask for a side of Aus Jus. ❤🇺🇸🙏🏻👍🏻👍🏻👍🏻

Every so often my local grocery store will have a great price on tomahawk steaks. So, I splurged and bought one! It was insanely good using only salt and pepper as seasonings. ❤

Oh dear, I just realized, I never explained, vegies are sometimes made to be nourishing for the soul, instead of nourishing for the body. Either way, they're fantastic. Glad you all had a great experience in Fredricksberg.

I guess that mean Wagyu is a no go when it comes to steak.
The Wife and I are foodies so we occasionally splurge for a couple of $300 dollar steaks.

That Tomahawk may have been pricey, but well worth it. A steak like that is an experience. Definitely the sort of thing people should splurge on when visiting. It looked absolutely amazing and the best beef is the type that just melts the moment you bite into it. That thing was JUICY and looked like it was cooked so well. I am utterly jealous, but glad you were able to experience that.

Both of your steaks are the Ribeye. The Tomahawk will have extra flavor from the bone. Beef Plate Ribs are cut from right below the same area. Fat, tender meat and particularly concentrated beef flavor make it some of the best meat on the steer.
@2:07 Me and a buddy had a rule: when we grill, if you leave hungry that's on you.
That's a rule I carried down with me to Texas. What's on the menu when I grill for the family and those passing by, steak, chicken, hotdogs, sausages, veggies (wrap in tinfoil they get hot but don't burn). :)

I love tomahawks ! Usually have them at bbqs or make it at home since it’s cheaper. Temp stick is definitely a need when cooking one of them, my first time I was lucky to get it the right color without using one lol guess that’s the Texan in me .

What a special trip getting to eat at these Texas BBQ restaurants and unique places to eat with friendly people. It's expensive but that beef and those Texas dishes are mighty tasty. Top notch beef that only a handful of people in this world will ever experience. I'm off to go get a hamburger now. Can't help it after seeing that precious Tomahawk steak. There's just something primal about grabbing the bone of a Tomahawk steak with your hand and just chomping on that prime juicy melt in your mouth Texas beef.

The first thing to do with any bone-in steak is to slice along the bone and remove it for gnawing on later, then slice the steak.

Just a little dining tip: If you are in Texas and you want something healthy, the vegetables are usually the wrong choice.
Note: that goes for most of the other Southern states as well, as veggies are mearly a tool we use to sop up our bacon grease.

I'm from Texas, in Fredericksburg I usually at the Fredericksburg Bakery, where the locals eat. A real taste of German cuisine.
The schnitzel there is the best. Also can't go wrong with the German pancakes

So surprised to hear you say you expected the ribeye to be tough. Even an average ribeye should be nice and tender, provided it isn't overcooked.
I never order ribeye so just what I expected with all the marbling, but like you say if cooked well, the marbling should be flavour and not fat

So glad you were able to experience Fredricksburg. If you ever get to come back to Texas, try to make a trip in April so you can enjoy the beautiful bluebonnets (our state flower) in that area.
From the small world perspective I almost ate there the Thursday before they were there, I came so close as to reading the menu in the window before walking around the corner and eating at the brewery instead.

The best BBQ is off Interstate 10 when you get to Lulling where there's Lulling Market and Lulling BBQ then you can go north on 183 to Lockhart and there's Black's BBQ, Kreuz Market and Terry Black's, there's also some lesser known BBQ joints on 183 It's considered the Mecca of BBQ

I'm so proud to be from here! Texas has a gigantic German-American community, especially in the area you're in. My own name is German! But one last piece of info for you: when in Texas, DRINK LOCAL. Don't go for the big brands. Our German-ness shows through best in our beer-brewing traditions! Ask the bartender for local brands to try, there's always some good ones no matter where you are in Texas.

The best part of big steak is leftovers in the morning. Steak and eggs over easy with fried potatoes and onions….excellent.

Fredericksburg is my favorite place! Cimmeron, or Texas Jacks gun shop is down the street…another favorite. Luckenbach is not that far away either. I’m a native Texan (family all over, ancestors fought with Houston back to Republic days), now living in coastal Southern California. I visit family often…enjoy your visit!
The only difference between a tomahawk and a bone-in ribeye is the big handle. So if you ever see a rib roast on sale, or bone-in ribeye on sale, you can get them to cut a slab into steaks at bone width, or about 2 inches thick. Then slap it on the grill for about twice as long as you would a 1 inch thick steak or it will come out raw instead of that glorious medium rare.
This usually takes me about a half hour to cook properly. I add that compound butter on top while it's on the grill, and as soon as it's almost melted I remove them and place them in a resting bucket (Tupperware container) for about 10 minutes. The steaks will absorb that butter while resting and become insanely delicious.
I eat my steaks blue, I guess you think that's raw. IMO, anything past blue is overdone.

I've accidentally undercooked them so I know how blue is. Too hard to cut and chew. But if you like them that way, enjoy.
