Corn chips friend perfectly, then add whipped eggs over very low eat. The crisp chips are what make this dish unique. This video simply added chopped tortillas. Now, it’s probably a great breakfast, but I would not call this migas

It's basically an open canvas. Using different proteins, veggies, salsas are a good way to add variety.
