    You are a true Tex Mex Chef! Thanks for clarifying the difference between Migas and Chiliquiles! I will make you my go to UA-cam reference for homestyle cooked Mecican Cuisine! I especially admire and love your your stories of your beloved first cooking teachers and models. You have definitely inherited a true family treasure that will forever benefit you and your family, and will continue to be shared and passed down to other interested persons.     I subscribed just hearing about Papi’s migas. I’m sure my Abuelita would approve as my Papi, unfortunately, passed before my parents wed.

    Migas are still my comfort food. forever and always. The very first thing i learned to cook at a young age.

      I agree, but to other people it’s exotic food. I had a conversation once with a Vietnamese guy and he said his food was comfort. I totally agree but in the outside world, a lot of these delicious foods are viewed as exotic restaurant dishes

    When I was 17 I moved to TX from TN to go to college in Corpus Christi. My best friend 's friends' parents were originally from Mexico.. Juarez, I believe. I would spend the weekends at her house. Her mother would make this for breakfast every Sunday. I fell in love immediately !! I never knew the name of it. My kids are now in their 30's and I've made this every Sunday of their childhood. I just called it The Tex Mex breakfast.. smh. Mrs. M made it just the way you do and so do I. Thank you for bringing back so many truly happy memories !! :D

    the tortillas are intended to be soft once dished correct?

      yes, they soften a little once eggs are added.

    We have the same dish with eggs in Turkey. Except we don’t use fried tortillas but just cook the eggs with vegetables and eat it with bread. It’s called Menemen and usually papis only dish to make 😄 I’m really impressed about how cultures are so similar around the world 🇹🇷 🇲🇽
