It's in a cavern in the desert. It's also part of a quest there where you have to find the head & torso inside the cave and attach them together and place it near It's giant, leviathan mother so the quest giver can admire them.
From the Gerudo great skeleton cave area and on the roof above the great skeleton is a giant spot breakable rocks, and in them reveals a miniature version of the great skeleton, including it's head, body, and tail though the tail uses a Colgara jaw from defeating it in the wind temple but if you completed that quest the find the 3 spots you can find Colgara in the depths.
