- Char Siu Chicken is an easy alternative to our popular roast pork char siu. If you can’t eat pork or just prefer chicken-or maybe it just so happens that the chicken is on sale at the grocery store and the pork isn't-this oven-roasted char siu chicken recipe is for you!
For this one, it's best to consult the recipe on the blog as there were a couple of moments of what we've decided to call DAD BRAIN where Bill misspeaks on some of the finer points of the recipe. Cinema verité right? Lol.

It's perfectly fine to baste a thin layer of using the raw chicken marinade. The temperatures are hot enough to kill salmonella within seconds.

the sugar we call for is just enough to get it shiny and sweet and in the corners of the chicken it might get a little charred but it shouldn't burn.
