Haggis Scotch Egg | Burns Night

  • With Burns Night coming up, I'd planned to make a haggis from scratch, but my plans were thwarted by the butcher who forgot to order me a sheep's pluck (heart, liver and lungs). Instead, I bought a haggis from the supermarket, mixed it with some pork sausagemeat, and made haggis scotch eggs. It's an interesting thing that regular scotch eggs don't have anything to do with Scotland - they were invented by Fortnum & Mason in London 150 years ago. But stick some haggis around your scotch egg and it really is Scottish!

    Keef, I. Absolutely ADORE your show. You and the Mrs. are simply lovely, and I watch your show with baited breath. However, even being a Culver of Scottish descent, I'll be good and well damned if I ever eat haggis! Great show, as always! ✌️❤️🙂🇬🇧

    I find if you crack the eggs after cooking and then leave them in the iced water they peel much easier.

    hi keef a good way to get the shells off an egg is to crack the shell and let them soak in water for a while to let the water in and then peel them the shell should come away easier

    I use two layers of clingfilm and roll the meat in between, it's fab!

    I brought what I thought was 3 Haggis scotch eggs. Turned out to be just a small tube of Haggis. I did make the Haggis scotch eggs though. The way your eyes lit up when your mistress of ceremonies MrsCooks said "Scotch Bonnet ". I thought when you and your mates get together you could play "who has the Scotch Bonnet" game . He he

    Mr keef. Your on point with the egg in water to test freshness. I've never seen it fully float but it will stand up on end as yours did in the video. @ 5:05

    I had the same problem with fresh eggs, found that when I add vinegar to the water and run them under cold water while peeling, now a days I make them in the instant pot. It looks delicious! Watching from America, Someday....

    about separating the egg from the shell: i usually poke a little hole in the bottom before cooking and after cooking immediadely put them into cold water (or under running water for a bit), that way its incredibly easy!

    Have you ever tried poking a small pin hole in the bottom of the egg before boiling? They peel much easier. I learned that from ramen chef Ivan Orkin.

    Peel the boiled eggs under cold running water. Works every time.

    I’ve been making scotch eggs at my restaurant for the past week, we’ve been stuffing them with a yolk pimento cheese mixture and wrapping them with sausage. it’s pretty good man

    I live in the US and I think its stupid we can't have haggis cuz of the lungs. But they allow cigarettes and their way worse for you.

      My understanding is that sheep lung was banned in the USA because sheep can contract tuberculosis and the lungs can transmit the disease to humans. Seems like there has to be some solution out there since other countries don't seem to have a problem with sheep to human tuberculosis outbreaks.

    "Gastronought" - A term coined by the late, great Chef and presenter Keith Floyd, who turned TV cookery into some of the best entertainment on the box, and an old fan of The Stranglers.. 28th Dec. 1943-14th Sept. 2009. Sadly missed. Strange how the Haggis is termed unfit for human consumption as it contains the lungs - yet they are quite OK with eating sausage and hamburger meat mix which contains God knows what!

    I've tried making scotch eggs before and it didn't go bad, but it didn't go like I hoped. I think I ran into not making the sausage bit large enough & the eggs were overcooked. Also, yeah, for whatever reason lungs are illegal to sell as meat for humans in the US, but it's fine as pet treats though. There is an actual reason, something to do with the way we raise livestock commercially, I assume, I've looked it up in the past but I don't remember. Hell, lamb is expensive enough as it is here, I can't imagine the lungs would be cheap even if we could get them. I think most "haggis" we get here is heart & liver and probably some kind of trim.

    Crack the shell of the egg with a spoon all around before you place it in the cold water. As it cools the water infiltrates the space created by the cracks between the egg white and the shell + membrane, this makes it easier to peel. I don't know if they will be affected by leaving them in the water though, I normally peel them directly after they've cooled down. Love your videos Keef, keep it up :)

    Stop using fresh eggs for boiled eggs. I used to work for an egg company that also made pickled eggs and boiled eggs for restaurants. They would store a pallet of eggs for a month so that they would be old enough to peel quickly and easily.
    What you really want to do is buy extra eggs now so that you can boil them next month. Buy eggs on Mardi Gras so that you can have boiled eggs for Easter.

      Agree. I make pickled eggs regularly and keep fresh eggs for at least a week before boiling.

    I have done sausage meat scotch eggs with hard-boiled eggs amazing' but not soft boiled eggs with haggis always been a little scared to try haggis! in your honest opinion Keef, what does haggis taste like? they look delicious, loved how you did the eggs in A kettle, and that tomatoe one at the end looked amazing :-))

      What does haggis taste like? Savoury, meaty, a bit peppery. Definitely worth a try - don't be put off by what's in it.

    Tried it, wasn't impressed. Eggs are tricky little backets.😉 My friend gets green eggs from her chickens. Something (probably an opossum) killed her baby that layed Brown speckled eggs it was a very sad day as she followed her around the yard. Yellow yolks come from what the chickens eat she told me and another friend that has a small farm catches and feeds her chickens MICE 😳

      @@Keefcooks I hate typos ... Especially if it's mine! Your food always looks great. I've had a very bad experience with haggis. I'm not sure what the norm is, but what I had was definitely not palatable!

    Why did you not mention that Scotch Eggs were invented at Fortnum and Mason in London?
    For those south of our border, we can buy proper haggis in Canada.

      @@Keefcooks Thanx for the update. I have not seen your post on Scotch eggs. As far as I know, you were the first to produce Haggis Eggs. In fact, F@M did not provide the name. It is attributed to what
      Londoners, who lived near Wellington Barracks called them as Officers of the Scots Guards from the barracks took a great fancy to them.
