    hi once again john ,the picture of your scotch eggs looked so good that i decided to make them straight away. john you are costing me a fortune, ive a new stand mixer then decided to get the scales and now the temperture gun , thats how much you inspired me to try new recipes mainly the bread then the butter, and the crumpets were a treat . thank goodness i found your channel, and plenty more to come i hope

    My Grandmother was Scotch Irish Appalachian. Every scotch egg recipe I see are all deep fried. Her sausage was home made and always had a good bit of sage. She never dipped her wrapped eggs in egg. She simply coated them with flour salt and pepper and browned them in an iron skillit in lard she rendered from that same hog they butchered. Taken out when dark golden brown. She just turned them in the hot grease to get them evenly browned. The eggs were hard boiled. Easily packed to take to the field or packed for a school lunch. Even the eggs were from the farm. All these recipes I see on utube are not authentic and way too complicated. Keep it simple. Keep it original. They were never eaten with a knife and fork at our house. Just eaten the way they were. Like an apple. Usually 4 good bites. Her sausage was never thickly applied. Made this way they will keep for days in the fridge.

    I never knew it would be so easy to cover a boiled egg with the sausage meat, I've always dreaded this part ! Following your method John, I am no longer afraid to tackle Scotch Eggs ever again.
    I used Cumberland Sausages once again for the filling, and a Low Carb bread chunks 'toasted' in an Air Fryer and blitzed in a processor for the crunchy coating.
    The only changes I would make for future use are ...
    1) Buy some prepared breadcrumbs, (Panko ?) or make my own using 'white' bread.
    2) Add a small amount of salt, either to the 'meat' or the 'coating'.
    3) Maybe in a future attempt, add some dried Fenugreek leaves to the meat mix (???)
    Otherwise, an amazing outcome, the family loved them, as did I !

    Oh John, thank you so much. I'm an Aussie in my 60s and although I've eaten and enjoyed Scotch Eggs away from home I have never cooked them myself. After fighting with the sticky, oily cling-wrap on the first one I had a lovely egg, by the time I was doing number six (small home grown eggs) it was a doddle. I used Pork, garlic and sage snags and added the extra sage. Good tip about using the meat from pre-made sausages, I think I might try that next time I make sausage rolls. Anyhoo my son who visited for dinner enjoyed them too. Looking forward to tackling your pastry and making meat pies. Mum, not a bad cook, always used packaged pastry so I've always assumed it was a DIFFICULT MONSTER, but you make it look easy. Thanks again, live long and healthy, cheers, Yvette.

    I always loved it when mum gave us scotch eggs in our school lunch boxes as a kid. Filling, tasty and reasonably healthy. They are also great if you mix in some pre-cooked rice into the sausage meat, or coat them in rice rather than bread crumbs.

    I am so glad you showed the 6.5 minute egg as well as the 8 minute egg, as we prefer the runny yolk. I hope you have as much fun making the videos as I do cooking from them. We haven't had a repeat meal in over a year now.

    I first tried Scotch eggs at a pub last month, and I couldn’t believe how good they were. The pepper jam they used really brought the whole dish together.

    In Belgium we call them "bird-nests" and we serve them with tomato sauce and also fries or mashed potatos. So good!

    I first tried Scotch Eggs at a Renaissance Faire in Texas! Fabulous!!! I don’t know how you eat them in the UK, but they’re really good with mustard! For something different, we do the same thing only with a cream-cheese stuffed jalapeño instead of an egg - we call them Armadillo Eggs!

    It’s been a while since I made scotch eggs, and I’ve always used sausages too. I add half an onion puréed in with the sausages as we love that flavour.

    4/29/22: I caught this recipe on a competition cooking show last night, but it didn't quite give the detailed instructions on how they actually make it, but the visual end result looked so yummy that I had to search for a recipe, and I stumbled onto your channel.     I love Scotch eggs and have been making them for years. I love that the centre of yours is still very soft. I devil the yolks and put the eggs back together before I roll them in sausage and breadcrumbs and I bake them too. We had Scotch tasting parties for years and served Scotch eggs to soak up the liquor. I made them in the dozens. Good times, good memories.

    John, you are the man. My favorite cooking channel. My bread baker hero. I would like to see your take on cinnamon rolls. I'm tired of depending on the local bakery. They almost never have them in the morning when I want them with morning coffee.

    One of the best foods you can eat. Great with hot or cold and perfect for a picnic. If you can keep the egg runny it is best with the chips.

    We have just started Elective Home Education with my autistic son and this afternoons home ed lesson was scotch eggs. We watched you do it and away he weñt. The end result was utterly superb AND he had to eat it with a few chips and salad, just like you did. It was genuìnely superb and i cant thank you enough.

    A friend once told me that these were VERY difficult to make which I took as a challenge. I studied video after video and made them. They were okay. Your recipe looks a lot easier than the ones I read and watched back in 2013! I may have to give them a go again!

    HAH! I ASKED for this recipe but WHA-LA! THERE IT IS! "Scotch Eggs"!
    I FIRST had these MANY MANY Years ago at a Renaissance Faire in Minnesota, and I asked the shop keeper for the recipe and as he and a friend of mine up there knew each other well... he had no problems giving it to me. I LOVE Making these and have turned alot of people onto these!

      Ho bro John, I am just a cook, but I have very Strong self preservation motives, you wotld know this if you grew up with
      black toast and gritty cabbage, when I was a boy, I got to suck the string that trused the chicken sometimes I got the drippings on stale bread before bedtime.     Had another go at making your 'Scotch Eggs' today John, (I made 15 !!!), and I can honestly say that my Misses, Step-Son, our next door neighbours, and my good mate ... not forgetting myself of course, thoroughly enjoyed them.
    I used Cumberland sausages, skins removed, and Panko breadcrumbs.

    I found your channel a few weeks ago and love it! I live in Texas and there was a Brit from Devon who ran an English style pub with his American wife in my neighborhood. I loved going there. They had Scotch eggs and served them with Colman's mustard. That and a pint of Fuller's ESB was a wonderful after work snack. Sadly, they retired last April and I really miss it. I'll have to try this recipe soon to get my fix.

    I LOVE Scotch eggs! Unfortunately, around here it's impossible to get a good one. They're overcooked, flavourless, tough, etc. I started making my own a few years ago and I'm happy to see that, according to your recipe, I'm getting it right. I also like that at the end you showed two different doneness levels for those of us who prefer a nice, runny yolk in their Scotch eggs. Well done, chef!

      Just a little extra information to help you along if you do try these baguettes.
      Please follow these 4 simple rules when making these baguettes. Give me a comment if you need any more help.
      1. Stick to the recipe rigidly, the quantities and ingredients are very important and carefully worked out for successful results.
      2. Use digital SCALES for all of the measurements including the water, don't convert to cups or measuring jugs, they are too inaccurate.
      3. Use proper bread flour with at least 12% protein, check the ingredients list on the side of the flour bag for the protein level, protein may show in grams per serving but just work it out, it needs to be 12g of protein per 100g of flour. Plain or all purpose flour has a lower protein count and is great for pastries, cakes, and biscuits, but is NOT strong enough for making bread.
      4. Very important...Check your yeast is working, BEFORE you start, you can do a yeast test as shown in my sandwich bread video here ua-cam.com/video/HWpSbYV96_c/v-deo.html

    I have meat around it. Meat and eggs together are great. I get the yolks nice and soft. I season the meat well. In a pub, having a pint of beer, I cannot get any better than that;

    These are SOOO EASY to make and are GREAT For not JUST "Breakfast" but ANYTIME! I LOVE THESE!
    At the Ren Faires... they have them pre-made and kept in a cooler and when someone buys one or however many, they just Pluck them out of the cooler and drop them into a basket of Oil and in Minutes you have a VERY VERY TASTY Scotch Egg! I like mine with melted cheese over them!

    Clever! I’ve tried to make Scotch eggs and tried pressing the egg into a ball of sausage. Did not work! This is so simple and easy! The modern cling film works so much easier than the very old directions I was trying to follow. Love the eight minute eggs!

    neat twist if you use say spicey Italian sausage and good pickled eggs ... you get an excellent spicey tangy scotch egg ... add a sweet sauce to it as well and you have everything but fresh smoked bacon on the side for a perfect meal
    .
    and bacon is smoked ONLY .. that junk sold in stores is salted and smoked also known as Panchetta ...NOT BACON

    Another outstanding cooking tutorial, thanks John. Best Scotch Eggs I ever had were some super-posh ones I had in a little restaurant somewhere near Oban. They were smaller and made around Quail's Eggs, with a slightly spicy, quite peppery meat and double-dipped Panko crumbs, served on a thin slice of Black Pudding. Delicious. Although I'm betting these will be every bit as good, especially if I get some decent quality sausagemeat. Cheers again John and thanks for the recipe & video.

    I've never seen anyone peel an egg so quickly. It takes me 20 minutes to peel 8 eggs for a batch of tuna salad so seeing you knock one out in 20 seconds was like watching sorcery. I'll have to give rolling the eggs a try next time.

    Hi @JohnKirkwood, thanks for the demonstration. As these are one of my favorite US "euro-pub" favorites, they're one of the best dishes that I never remember... I am a huge fan of steaming eggs vs. boiling eggs - steamer tray 12 minutes (m) for "hard-boiled", 10m for "soft-boiled", and 8m for "ramen-style."

    Hi John....with the advent of air fryers (I got mine for Xmas) I’m going to follow your recipe but instead of the oil bath, I’ll spray them with a coating of oil and give them about 10 mins or so in the air fryer.
