🌹rose water macarons🌹
Hey guys i finally finished the video , Let me know if you have any questions or something you didn’t understand! And if you can give me your feedback so i can improve on my next videos! I hope also want to see how you will your macarons you will make with that recipe haha! Enjoy ❤️
Recipe for 50 macarons (made out of Italian meringue) :
180g : sugar
40g : water
60g : egg white (1)
200g sugar powered
200g almond flour
90g egg white (2)
Process:
1• Sift the powdered sugar and the almond powder
Using a spatula, mix the powder mix and the egg white (2) together.
2• Bring the granulated sugar and water to boil, and cook it to 120°C/248°F.
Meanwhile, put the egg white (1) in the mixer. When the syrup reaches 115°C/240°F, whisk the egg white on medium speed
Pour the syrup at 120°C/248°F on the fluffy egg white make sure you slowdown the speed while pouring, and then put it back on medium speed.
When the meringues cool down and get to medium peak stop it and let’s start the macaronage.
3• add half of it into the powders and egg white mix.
Mix the batter using a spatula and then the other half.
Once the batter is homogeneous, pipe your macarons using a piping bag and a nozzle n°10.
Oven temperature: 135C/275F
Baking time: 12 min, check, it may need 1 to 3 more min depending on you oven.
Recipe for the rose water ganache :
170g heavy cream
80g rose water
440g white chocolate
1• place the heavy cream and rose water in a pot, boil it and poor it onto your white chocolate.
2• mix it up untill combined and homogeneous.
