    Yes! the right way! Of course, you really want to bring out the flavor and achieve the best texture, i saute ang garlic until brown, then i-brown ang meat! Remember giving the right color to your meat during browning will seal the flavor, hindi yung parang flat. Tulad nitong ginawa ni kuya Bogs! Then, saka ilagay ang pampalasa na soy sauce and vinegar. Then YOU HAVE TO LET IT SIMMER in low to medium fire para di masira kaagad yung meat pero magiging tender sya. Then reduce sauce to your liking!

      @@MayumiP2288 tigilan mo nga ako. Baka sa youtube ka lang natuto nagluto. Di ginigisa ang adobo, bakit? Kasi useless na step yan. Alam mo kung ano ang right way nyan? Pagkaluto mo, bukas mo kainin. Doon manunuot ang lasa. Di mo ata alam kung kelan i brown ang garlic at kung kelan hindi

      Kinda off. You don't "brown" the garlic, you blister it on low heat til it turns white then throw in the proteins. Gaglic becomes extremely bitter fast and flavorless when browned or overcooked in which he did in the video, so whatever texture/fragrant you mentioned is complete placebo. No traditional mainland restaurants cook like this this.

    Agree ako. My lola who was born in 1900 taught us adobo with only garlic, toyo, and vinegar. No onions.

    ang pinaka d'best talaga sa pagluto ng adobo ay unang pakuluan sa tubig ang baboy hanggang matuyot dahil kusang mag mamantika yun tapos dun mo igigisa siya sa garlic at sibuyas tapos pag gisa tsaka mo na timplahan ng tuyo at suka paminta at asukal ang last part para manamis namis.. yan ang totoong pagluto ng adobo.. malambot na crunchy pa.. 😂😂😂

    I like this version. Uncomplicated technique, the pork is not overpowered by too much ingredients. The sauce should compliment the star of the dish, not overpower it. Thanks for sharing.

      You don't even have to gisa the sibuyas and the bawang. Just put all the ingredients together at the same time,excluding suka of course, coz it will make the karne hard. add water so as to make the karne tender and when you think yhe karne is tender enough then put the suka,and a little bit of asukal, cook it for a couple more mins. Make tikim and it's on your own discretion if needs to add more toyo, or suka, or asukal.

    Yes, adobo could be cooked in different ways, according to regional or your desires or style how to cook it, but the traditional and common ways to cook, is to marinate the meat (whether pork, chicken, beef, etc.) in soy sauce, vinegar (according to taste) together with pepper corns, bay leaves, garlic, unions (optional) for at least 30 minutes then put all these stuffed in a cooker or casserole (without water) then cook it in low or medium fire until thickens, that's it.

    There is no right or wrong way. There is just a "way". Each household has their way of making Adobo and that’s what makes it interesting.

      Go check Geoffrey ZakarIad who blatantly claimed he cooked a TRADITIONAL version of ADOBO despite him butchering the dish by adding non-traditional ingredients. (Parsley, Lemon, and Habanero)
      He even seared the Chicken without sauteeing it with the aromatics.
      Lemme ask you, if you cook Adobong Puti do you still call it Adobong Puti if you use Soy Sauce? Of course not right?
      It's more than just a dish, Adobo is a method of cooking and preserving meat that predates the use of soy sauce in Filipino cuisine, although it was influenced by Chinese cuisine.

      I couldn't understand much or what he said because I only speak konti tagalog, so thank you for showing the ingredients in English. Personally, I prefer pork without all the fat and I like to add potatoes, carrots and peas. I've never added sugar or patis, but I'm going to give that a try.

    Easy and tasty. I use a leaner pork loin because my wife will not eat pork fat. The pork will be more dry but it’s still good with the sauce.

    Thank you for sharing your pork adobo. Your proportion of soy sauce, vinegar and water is the same as mine and it’s perfect every time. I’m going to add my vinegar last just like you did. Thank you again!❤

    Your tip on not stirring the vinegar is a secret that most cooks doesnt know. A lot of adobo recipe or other vinegar based recipe failed because stirring vinegar before simmering always leave it a flat baking soda like after-taste. One additional tip i would say is NOT to cover the pot immediately after adding the vinegar to let the vinegar release its rancid after-taste steam out of the pot, let it simmer a little bit before covering the pot with its lid.

      This ain't true unless you are using unrefined vinegar. This is an accurate advice probably 20 years ago.

      I continue to reduce and then add water and reduce and then add water to the sauce because I find that the longer cook time removes the overly sour and acidic taste of the vinegar.

    The original adobo uses only garlic like this recipe. Now, there are plenty of versions all over the country. But the best adobo is the recipe of your mom!

    I like the sequential cooking process of the ingredients: sauteeing pork with browned garlic and other spices infuses most flavorful aroma and permeates thoroughly into pork, adding vinegar last enhances delicious adobo sourness taste.

    No , the right way is to put everything ( i mean EVERYTHING) in the pot let it boil, dont stir, then simmer then its time to stir and let it simmer until the sauce thickens . Yon ang kinagisnan Kong adobo . Walang gisa gisa , walang babad babad.pwede mong damihan ng sibuyas bombay ( shallots) bago lumapot ang sauce.

    I cook adobo but I don’t measure the ingredients. I do the same way as my grandmother taught me, eyeballing all the ingredients that I put in and I never disappoint.

    its better to pan-seared the pork first then use the oil itself from the pork to saute the garlic. in that way the meat is soft half way faster than the garlic-pork saute.
