what I eat in a week + how I exercise - to be happy & healthy ( vegan + intuitive eating )

- Hey friends, welcome!! I wanted to show you what I eat during this week but also how I exercise! ( which is something I've never really dived into before! I hope you enjoy💛

Recipes from this week:
Day 1: Rice noodle soup
1 thumb worth of fresh ginger
3-4 cloves garlic
1/2 small onion
4-5 cups low sodium veggie stock
2 tbsp tamari
1 tbsp maple syrup
1/2 lime
pinch of chilli flakes
salt to taste
1 large serving of rice noodles
* feel free to add carrot, bokchoy, mushroom, broccoli ...
- dice onion, mince ginger & garlic
- heat a pan on low heat & add oil. once slightly hot add onion ginger & garlic. cook for 5-6 minutes ( if its browning to fast reduce the heat! ) - if you want to add carrot / mushroom, throw them in with the onion, garlic & ginger. Things like bokchoy or broccoli can wait!
- add veggie stock, tamari, maple syrup, lime juice, chilli flakes & salt to taste. (nows the time to add things like bokchoy & broccoli) Cover & cook for 3-4 minutes. Add rice noodles then cook until rice noodles are finished
- serve & enjoy!
Day 2 lunch "curry"
1/2 onion
2 celery stocks
1 medium carrot + carrot tops! ( if you dont have the tops feel free to add some spinach, kale and or some parsley! )
1 small sweet potato
1 1/4 cup socked red lentils
1/2 tbsp oil
salt to taste ( 1-2 tsp )
1 1/2 tbsp red curry paste
1/3 - 1/2 cup water
1/2 lime
- dice carrot, onion & celery small. Heat a pan on low-medium, add oil & once hot put the carrot, onion & celery into the pan. Cover & cook for 3-4 min
- Dice sweet potato small and chop the carrot tops. Add to the pan, salting to taste. Cover & cook for 5-6 min
- Add lentils, water, red curry paste and lime juice. Mix really well. Reduce heat slightly, cover & cook for 5-7 min
- Serve with bread / pita
Day 3 breakfast tacos:
3/4 cup socked red lentils
2 tbsp bbq sauce ( mine was more of a light hot sauce so I added 1/2 tsp smoked paprika - if yours is already smoky you don't have to do that! )
salt to taste
1 tsp oil
3 corn tortilla
hummus ( or mashed avocado to liking )
ribboned carrots
red onion (you can used picked red onions that would be so good!)
lettuce
green onion
lime juice to taste
-add your oil to a small pan/pot on low-med heat with your lentils, bbq sauce smoked paprika & salt. Mix in well (feel free to add a splash of water if needed)
- build your tacos the way you like!
Day 5 lunch: Cashew Sauce
1/3 cup raw cashews (soak in hot water for 20 min)
1/2 tbsp smooth dijon mustard
1/2 tsp salt (or to taste)
1/4 tsp black pepper
1/2 lemon (juice)
3 tbsp nutritional yeast
Day 6 dinner:
3 tbsp oil (I used sunflower)
2 small leeks
10 (or so) Brussel sprouts
3 cups chopped red cabbage
2-3 cps brown mushrooms
3-4 tbsp balsamic vinegar
3 cloves garlic
3 sprigs rosemary
6-7 sage leaves
salt to taste (I used about 1 1/2 tsp worth)
2 tsp black pepper
1 - 2 tsp oregano
pinch of chilli flakes
- add everything to a baking dish & cook @400F for 30-35 min

A tip for you, dont keep your bread in the paper bag, it takes out the moisture and makes it go stale faster. Use a plastic bag or wrap it in plastic or in a container of sorts. Even you can keep it sliced frozen and take out some when you want it tastes like fresh

OMG I just made a comment but then I saw your grocerty haul had brussel sprouts and I just HAVE to share a recipe I just learned about brussel sprouts from America's Test Kitchen. You can either watch it: How To Make Skillet Roasted Brussel Sprouts With Chili, Peanuts and Mint ~ but just plain or with Maple Syrup and Slivered Almonds is great. The beauty of the recipe is they are ready in 10 minutes from prep to serve: if you use small to medium sized ones, like 1 to 1.5 inch long. Trim off stem base, cut in half. Set cut side down into a cold teflon skillet, add 5 tablespoons oil and set to medium heat. Cover and cook 5 minutes. Remove lid, rearrange if outer edges aren't browning as much as the center pieces, and let cook with no lid for 2-3 more minutes. Test for doneness with sharp knife, should be tender. Then add any flavoring ingredients at this point.
I love your videos so much! You look so confident, so bright, so good about food. Even though you're imperfect and you say that, you're so beautiful. How can I become confident in myself? How can I love my body like you? I want to have a good relationship with food.
I can recommend a "recipe" with balsamic vinegar. I use it as a pasta "sauce"... Essentially rough dice onions and let them get golden, add halved black (and green) olives, let them blister, add slices of garlic let them get golden and pour a bunch of balsmic vinegar. Let reduce add a bit of pasta water add pasta and enjoy. It was an accidental "i have nth in the fridge" recipe and it works so well! Let me know if you try it 🙂

Couple random questions for you - what kind of "milk" do you use that froths up so delightfully? Do you use maple syrup just for the sweetness or is there a particular reason you choose that? Would agave or honey (I know, not vegan) be an acceptable swap? Thank you! Much love and light!
I like oat, soy and cashew milk for frothing! They all have a decent amount of protein which makes them easier to froth:) I personally just prefer maple syrup for the flavour and the sweetness it provides! It’s also the least expensive out of all the liquid sweeteners where I live! ( real Canadian lol! )

I’ve never personally been to New Brunswick! But being in an environment you can learn both languages would be amazing! However I highly encourage you to look into British Columbia, it is gorgeous!💛 ( I’m personally from Ontario and I live in the GTA, it’s great but there are better places in Canada lol! )

Sunflower oil is extremely high in omega 6 with a very scewed omega 6 to 3 ratio. I don't use oils due to texture issues though plenty of whole fats (around 40 percent of my diet is fat which is good for me according to my PhD Dr). I you wish to consume oil, avocado oil for frying and flax seed oil or walnut oil for salads.
I am so happy that you're open to showing yourself drinking alcohol as a "healthy" vlogger

You know what's so good? Juicing half a celery bunch, cut up a lemon, and apple, add all to a blender and then blend with water :) mmm mm soo good...i am obsessed with this juice. It just tastes so good

I only eat eggs a couple times a year, there are by no means a source of nutrients for me. I get my B12 from fermented foods! Thank you:)
