Ingredients:
Cake:
2 cups grated Carrots
250 grams Oat flour
2 teaspoons baking powder
1 tablespoon ground cinnamon
½ tablespoon ground cardamon
¼ teaspoon ground nutmeg
Pinch of salt
FRESHLY grated ginger
3 Eggs
150 ml organic coconut oil
200 grams raw sugar (you can also use agave/maple/honey syrup!)
1 can crushed pineapple
Walnuts or pecans (optional)
Topping:
½ juice of a lemon
1 whole peel lemon
40 grams raw sugar (you can also use agave/maple/honey syrup!)
100 grams Original Philadelpia
100 grams Cottage Cheese!
