I’ve been a pescatarian for like ten years and honestly I don’t feel like I’m missing out! You’re totally right about the meat swaps though, I remember getting some “veggie boneless Buffalo wings” and looking at the nutrition and realizing it was higher in calories and fat than actual chicken Buffalo wings. If you like Greek flavors you should totally make tzatziki sauce with green yogurt. There are recipes all over but basically it’s just Greek yogurt, evoo, lemon juice, garlic, dill, and then I put a TON of cucumber in there. It’s so good I can’t believe it’s healthy and high in protein!

You actually motivates me to cook and not go eat out 😜Living by yourself in a different country and through this time isn’t easy , in general just being somewhere by yourself and going to school and all, isn’t easy at all but you do it and that motivates me to look outside my comfort zone. YAYY!!! So excited for this video! :) We love you!! & girl, I usually eat chocolate for dessert every night, however, I found a recipe for dessert overnight oats, and omg it is so good! My favorite one so far is to saute blueberries and strawberries into a pan, adding plant milk into the oats, some cinnamon, organic maple syrup, a little vanilla extract, almond butter or peanut butter, and some coconut yogurt (Or regular yogurt), and then mix in the sauteed berries..it is so good! I recommend giving it a try if you are interested :) Thank you for sharing what you eat in a week, it is always inspiring!
A simple yet healthy dinner that i make in 10 mins is i cut up onions soak in lemon+salt for 10mins then make jasmine rice and mix the onion mixture with tuna and add it to the rice. Delicious easy dinner

Ohhhh....leeks in soup in any form rocks. Going to get some tomorrow. Haven't found any gluten free/grain-free vegan substitutes so I have to work with what I can.... organic turkey, eggs, salmon... Sorry but ya gotta do what works.... Keep it up!!! Kudos for getting the courses done too...

You might like brown rice congee! I make it with left over rice, a chicken stock cube, and heeeeaps of water. You can then add any vegetable toppings and pickles. Teriyaki mince with green peas and zucchini is great. The Japanese version is called Zosui. :)

For the oatmeal pancake you needed to put the oats in a blender till it looks like flour and add the ingredients and blend again.
