@@AllWingsEverything actually, yes I do. I soak my lima beans overnight, then I like to cook down my smoked meat until it's tender before I add my soaked lima beans. That way, the meat is falling off the bone by the time the beans are cooked perfectly. Also, I use white pepper instead

1 hours is not long enough. Typically you have to cook them longer if you don't soak them long enough.
