Simple Roasted Tomato Soup - Vegan - Protein Packed

  • Hello, my friends and welcome back to another video! Today we are making a delicious Roasted Tomato Soup. This is a pretty hands-off recipe which makes it perfect for a busy weeknight dinner or super easy lunch!
    My name is Amanda and I am a home cook who became a Vegetarian in 2022, this channel will follow me and my eating habits as I Journey into Veganism in 2023 and beyond! Let's eat more plants together! XOX
    What you will need:
    -About 625 grams of tomatoes
    -1 large onion
    -4 to 6 cloves of garlic
    -1 tsp salt
    -¼ tsp black pepper
    -1 tsp Italian seasoning
    -3-4 Tbs olive oil
    -1 can cannellini beans drained and rinsed
    -2 cups veggie broth or water
    1. Start by preheating your oven to 400° F. Next prepare your veggies by peeling the garlic, roughly chopping the onion, and roughly chopping the tomatoes if needed. I used cherry tomatoes in this recipe so no chopping was needed.
    2. Next prepare your 13x9 baking dish by drizzling it with a little bit of olive oil then throwing in the tomatoes, garlic, and onions. Sprinkle the salt, pepper, and Italian seasoning over top. And finally, drizzle with the remaining Olive oil.
    3. Bake at 400° for about 30 minutes or until the tomatoes have blistered and everything looks nice and roasty.
    4. Very carefully transfer the roasted veggies into a preheated Dutch oven or large pot. Add in the cannellini beans and veggie broth. Allow the mixture to heat up for a few minutes.
    5. Next, we blend. You can either transfer the mixture into a high-speed blender, blend until smooth. Just make sure to remove the vent when blending hot liquids. Or you can use an immersion blender directly into the pot. Be careful because it can splatter if the liquid does not properly cover the immersion blender. You will get a smoother texture by using a high-speed blender.
    6. Once the mixture is blended return to the pot if removed and bring to a simmer for about 5 minutes. Optionally you can add in a squeeze of lemon juice and fresh basil at this point.
    Once done, the soup is ready to serve! Enjoy with some fresh black pepper, olive oil, and fresh basil! The soup is great for meal prep and also freezes well for a few months.
    * To Reheat from frozen add soup to a small pot on low heat with 2-3 Tbs of plant milk and cover. Stir often until thawed and serve.
