Red Lentil Chili - Vegan - One Pot - Cozy & Hearty Fall Meals

  • Hello, my friends and welcome back to another video! Today we are making a delicious one-pot vegan red lentil chili, sourdough croutons, and quick pickled red onions!

    Airfry at 380F for 7 minutes
    Pickled Red Onions [12:43]
    Vegan red lentil chili recipe
    1Tbs avocado oil
    ½ red onion or medium yellow onion
    4-6 glove garlic
    2-3 Tbs tomato paste
    1 cup rinse and drain red lentils
    1 can rinsed and drained black beans or any other beans of choice
    ½ tsp onion powder, garlic powder, chili powder, smoked paprika and salt
    ¼ tsp cumin and optional red pepper flakes
    1 can tomato sauce
    1 can fire-roasted tomatoes + 2 cans of water (about 4 cups)
    1 no beef bouillon cube
    Finish with a squeeze of fresh lemon, a drizzle of balsamic vinegar, and 1 Tbsp of cocoa powder
    Salt and black pepper to taste
    Chop the onion and garlic, rinse the lentils and beans. Heat a Dutch oven to medium heat and then add oil, once the oil is hot add the onion and saute for about 5 minutes, add a pinch of salt and the garlic, and continue to cook for about one more minute. Next, add in the tomato paste and spices and stir until the tomato paste has turned a deeper red color. Continue to stir so spices and tomato paste do not burn. Add in the rinsed and drained lentils, beans, tomatoes, can of water, tomato paste, and bouillon cube. Bring to a boil and then reduce to a simmer for 25 to 45 minutes keeping an eye on the liquid level adding more water if needed to ensure the lentils are cooked through. Once the chili has reached the consistency that you like remove it from the heat and stir in the cocoa powder, lemon juice, and optional but recommended balsamic vinegar. Season with additional salt and pepper to taste. Serve with vegan sour cream or plain yogurt, fresh cilantro, pickled red onions, or any toppings of choice along with our sourdough croutons!
