- Welcome to Bonita's Kitchen! Today we will be making Graham Sandwich Bars, these delicious bars are one of my childhood favourites. See recipe below!
Ingredients:
1 Box, Graham crackers
3/4 cup, cold water
1 pack, gelatine
1/8 tsp, sea salt
3/4 cup, white sugar
3/4 cup, confectioners sugar
1 tsp, baking powder
1 tsp, vanilla
1/2 cup, coconut
Chocolate Topping:
1 1/2 cups confectioner sugar
4 tsp cocoa powder
2 1/2 - 3 tbsp cold water
Method:
Layer a 9 x 9 inch baking pan with parchment paper, then one layer of graham crackers.
Keeping equal about of crackers for the top, set aside for last.
In a small bowl put cold water and pack of gelatine, mix together let stand for 5 to 10 minutes until gelatine is swelled or spongy.
Then stir in white sugar, sea salt and gelatine in a saucepan, on low to medium heat let cook on stove top until all sugar have dissolved.
When hot remove from heat and stir in confectioners sugar, then let cool to room temperature. ( leave in saucepan or transfer to medium bowl )
When cool, transfer all gelatine mixture into a mixing bowl and mix until foamy.
Then add in baking powder, vanilla and food colouring of choice.
Continue mixing until you see the gelatine starting to hold stiff picks, this will take about 10-15 minutes.
Then pour filling over graham crackers, after you got all filling in pan and smooth.
Then layer graham cracker the same way you layered the bottom so the are even with each other.
In a small bowl mix confectioner sugar, cocoa and water together until combined.
Then drizzle over top of graham crackers, or spread.
Let set for over night or 6 to 8 hours, in the fridge.
After your filling have sat, remove the parchment paper with the graham sandwich bars, then cut evenly along the edge of each cracker, roll sides in coconut or grated chocolate or leave plain.
The graham sandwich bars can be kept at room temperature, or fridge, if you like to keep them longer freeze remove as needed.

mY MOM used to make something like this , she used to call them marshmallow squares . She put crushed wafer squares. I have a question do you think Sugar could be substituted with splenda for diabetics. Love yoir show , been following your show for a long time now. I have all my brothers and sisters across Canada watch you as well
Oh my how sweet are you, thank you for your lovely message and for sharing our site with your family and friends. I'm sure you can substitute with a low sugar, I've only made it with regular sugar but its worth the try. Please followup with me if you make it that way. Enjoy and stay safe. :) Bonita
Does the filling melt once the bars are removed from the refrigerator?
No they say firm all the time and if you freeze some and remove them freezer, they taste just as delicious. Enjoy Bonita
Please do you know how to do the Purity apricot squares once made by purity factories. It was a special texture of dough

@@bonitaskitchen You Guys as well!!!
Yummy! Question if you let it setup out of the fridge do the graham crackers stay crisp?
That is a good question, I'm going to say it may be not as soft because it is at room temperature, I've only put them in the fridge and froze them. Enjoy and thank you :) Bonita
Could flavour drops be added instead of vanilla? to go along with the colours.
I'm sure that will work, give it a try and please followup and let us know. Enjoy :) Bonita
I always take a picture with my phone when I have to remember something because I know I'll forget :)
Thats ok its nice to take pictures for reminders, thank you for stopping by and enjoy to the fullest....:) Bonita
More chocolate please! Lol. 😂 Basically it's a big pan of s'mores if you add chocolate, right? The gelatin mixture is like homemade marshmallow!
True but you make the marshmallow in this one nut just melt it in the graham crackers. I hope you get to make them....Enjoy Bonita
why the baking powder?
My understanding is it's got something to do with keeping the firmness and holding the marshmallow form. It don't make it taste any different. Sorry I don't have a more exciting answer, but if you make them followup and let me know what you think. Bonita
I think choc. Graham crackers would be even better. IMO....
Yes for sure, thank you for your message and enjoy to the fullest. :) Bonita
