This is the kind of perfectionism and attention to detail I saw in my mother and aunt and grandmother and great-aunts. The eggs mass produced are different from the ones your own chickens produce on a completely "clean" diet, both in size and albumin, so the amount of flour used will differ. One of my cousins moved to Switzerland. When his mother came to visit, she brought her own flour and eggs, mortadella, tomato passata, etc., but the tortellini still weren't perfect. Next time she brought the water for boiling them too. :) My husband always said he could never get used to what he called our "obsession" with perfection, but he has sure always loved the finished product.
Same thing said by my wife when I obsess over having ingredients from my hometown posted across the country while she'd be benefitting the most out of the obsession and agreeing later on!
I bought your pasta grannies cookbook and am in the process of cooking my way through it. It is fantastic! Please come up with a second one as soon as you have collected more recipes! 👍🏻👍🏻
This channel is wonderful. It is great to save for posterity these wonderful traditional recipes. I hope international viewers realize how fresh, interesting, and imaginative Italian cuisine is, not what you find in commercialized restaurants in the US for example.
I am an American who lived in Siena Italy for study one year. The food was so gloriously fresh and flavorful, and when I returned to the States, I had those fresh flavors still in my palate. Months later, I attended an Italian Festival in a neighborhood in Chicago, but sadly was so very disappointed in what I had to eat. There were a lot of starchy offerings like thick crust pizza, spaghetti, and a few types of sandwiches with thick slices of pastrami, but nothing fresh or particularly good.
I like how everything she does has a reason and she fully understands that reason, she doesn't do anything just because that’s how she was taught. I've never seen anyone with a collection of Mattarello and rolling pins before, I just have the three, a 100cm Mattarello, a traditional British rolling pin and a 60cm French.
The flavor combination of a sharp aged cheese like Parmesan and a sweet spice like nutmeg is something that dates back at least to the cooking of the Italian renaissance.
I had never heard of this combination! ( I put red peppers, and Hungarian Paprika in my tomato sauce, but, I eat less cheese and no meat.) I'm going to try this combination with nutmeg!

Ms. Vicky, once again a great video with the dear soul Ms. Ada, we would have many variations to this recipe here in Appalachia, this most significant one would be the use of the pumpkin( our pasta is more simple also) & although we tend to like it more in a dessert ie: pie, pudding, etc... we opt for the squashes for supper, butternut, spaghetti, acorn, etc...it is very delicious though & our sausage can be nearly the same, but there are many varieties depending on availability, God Bless all, please stay safe
Yeah, seems like the biggest failure/crime for a women is looking your age or older, lol. She looks 80, but she looks elegant and classy. But most importantly, she seems to be active, healthy and very skilled! :) That Pasta looked absolutely amazing!
Please learn about soffritto, is really one of the most important things about Italian sauces: celery, onions, and carrots, it is what gives consistency and a great taste to many Italian dishes.

Yeah, she is a farmer, Italy was mostly a farmer culture in the past. Many of the recipes in Italy have a farmer's origin.
