Not to be rude, but same thought with +Kagome Higurashi (I'm also a Taiwanese, previously worked at a boba tea house in LA). I say 20min/20min, (once the boba all afloat, turn down to mid heat to simmer, with cover) and dont pure it into another glass bowl but simply remove the pot from the heat and cover up. Also, I would suggest washing the boba after cooking them before they have this slimy layer which you probably wouldn't want them in your drink. (at least thats how my store did it). Throw them into the brown sugar/honey mixture (not syrup yet), cook with boba for 5-8min and set aside, let it cool down for later usage. I seriously LOVE how you made the thai tea from scratch tho, always thought about what spices are in it but never looked it up lol. Appreciate the recipe :) Love this video!
I have a simple recipe for it: 1 bag of black tea 2 cups water 3/8 cup sugar 1 tbsp vanilla extract 2 drops red food coloring 6 drops yellow food coloring a pinch of cinnamon boil until completely dark pour in container to cool (throw it in the fridge to cool faster) add some milk to it for the bright orange
it looked so pretty when you added the milk at 3:12!! the contrast by the gradient effect from dark to light ahhh. is it possible to just leave it like that or is mixing a must? job well done Byron👏👏

I watched many video from your channel and I like it. But I think this recipe is pretty weird. Well, I am from Thailand and Thai tea is sweet and bitter but not sour. We use only Tea leaf (made for making Thai tea, I'm not sure about what's mixed in), hot water, sweet condense milk and milk. We don't add any honey and I think no tamarind (I didn't smell any trace of honey, for tamarind, I think they probably add the seed but not flesh). Apart from the tea, I think some Bubbles are undercooked (you can tell from the colour). When they are cooked, the bubble will be on the water surface and the uncooked are under the water.
im totally agree with you here. im amazed, as a thai myself, when rachel said that it taste just like thai tea. this got me wonder that thai tea in the states taste like this? even though im sure this recipe would be tasty but its quite misleading to title as thai tea. btw cooked boba sinks too, but im with you that there r some that r undercooked here in this video
Nuttanun Soisup I believe that his recipe'd not be sour. Cause the tamarind used is the sweet one. I'm Vietnamese and I can see sweet tamarind named "Thai Tamarind" sold popularly in my country :D

I'm from Ceylon (Sri Lanka).. the tea leaves are definitely the best! Also instead of milk we use Condensed milk for our tea...
