PUMPKIN POWDER (flour) ~ how to MAKE and what to DO with it.

  • This works with any pumpkin or winter squash. Once you have pumpkin powder handy, it's hard to imagine a culinary life without it. The possibilities are endless.
    Despite Seminole pumpkins storing without refrigeration for up to a year or more, the powder has the huge advantage of being already cooked and available in any desired amount, much like a spice. It also takes up lot less pantry space compared to storing the whole pumpkins. Heck, it even travels well - think hiking, camping, etc.
    Steam or roast your pumpkins or winter squash until fork tender. Release flesh from skins. Mash with a potato masher or run through a blender. Spread evenly on dehydrator mats and dehydrate until dry. (Please note: Even when fully dry, the pumpkin leather may remain pliable while warm, but turn brittle when cooled). Powder the sheets. A coffee grinder works best.
    Store in an airtight container, and use it in any creative way you can think of.

    I am so glad I saw this today. I will be dehydrating a pumpkin or winter squash this weekend. Can't wait to play with pumpkin powder. I do hope you weren't badly affected by Hurricane Ian and that you and yours are safe.

      I hope you'll like it. Make it 2 pumpkins or squash, there is a lot of moisture loss. We got VERY lucky with Ian, some wind gusts, but not even a drop of rain. I hope you sailed through nicely as well. :)

    Those seminole pumpkins are overlooked by a lot of gardeners...they keep for months and still taste great. I still have one left from last July that I will crack open next month just to see. This is off subject but I recently watched your gyro vid with venison and it got me thinking. Last week I got the cheapest, toughest cut of beef I could find and velveted it overnight with baking soda, the Chinese way. I was able to literally cut it with a spoon after cooking. I still have venison in the freezer...I bet it works for it too. Come on gyros! :) As far as uses for the powder, risotto comes to mind, also egg nog, home made breakfast sausage and bacon, pancakes, home made candies, baked fresh figs, ummm errr I'm sure I'll think of more once I hit 'submit' lol.       Great suggestions for the powder uses! I'm sure I could talk the boy into pancakes for breakfast and risotto for dinner. :) I never velveted with baking soda, only corn starch. Now I need to try baking soda. Thanks for mentioning that.

    Sprinkle a little Ascorbic acid Vit C powder into the puree and it helps keep the color bright. I'm doing this with my apple butter this year and it comes out much lighter color.

    Thank you, this is the best collection of ideas for using squash powder I've seen. Right now I'm trying to use zucchini flour but the next thing to get dehydrating is the winter squash that are at the end of their storage so you are doubly helping me.

    Wow! An outstanding video! You have been so busy! I just bought a freeze dryer on July 4th as an Independence Day present to myself! I love it! I also bought a dehydrator. I've been wanting to do pumpkins and your usage ideas are fantastic. I don't think I would have ever thought about putting it in eggs. They look delicious! You have inspired me!

      Awww, thank you! :) And please know, I'm so jealous of your freeze dryer. That would be such an amazing thing to have. The dehydrator works fine for me, but freeze drying would be super level preserving. First thing I would make is egg powder. :) Have you used it yet? Dehydrating is so super space (and jar) saving, I do it with all sorts of things.

      @@homesteadinginnorthflorida I have not dehydrated eggs, but I freeze-dry them all the time. They come out very fluffy in the freeze dryer. I also freeze-dry yogurt, cream cheese and sour cream. They all come out just amazing! I do lots of peppers and herbs from my garden in my dehydrator.

      Yeah, it really takes a lot of pumpkin flesh to make a decent amount of powder. But, it then stores so well and is so easy to use.

      Great idea, though I think unless pumpkin spices are added with it. it won't have the pumpkin spice taste. But those would be easy to add. It will definitely add a little bit of sweetness. :)

    Great ideas using your pumpkin powder. What about freezing the bananas and making pumpkin ice cream?. I was just watching RoseRedHomestead. She had done some recipes with hers. Might give you a few more ideas

      GREAT idea incorporating it in banana ice cream! I actually make a lot of banana ice cream, but didn't even think of mixing it in right away. I've seen RoseRed came out with a powder vid, haven't had time to watch it yet, hopefully tomorrow. Gardening season has started here and it's so nice outside, that makes youtube an evening event. :)

    I'm having trouble finding seed, any suggestions? plus can you eat it like a squash? backed with butter, brown sugar? i do love to grow and eat squash, but in Florida the worms! I'm in central FL inverness.. so i plant butter cup, but next is butter nut, acorn, and a few others, i wanna grow the Seminoles, i need seeds... lol

      Baker Creek Seeds has Seminole seeds. And etsy sellers. Baker Creek seminoles look different, but probably taste the same. Seminole pumpkin flesh resembles a butternut squash more than it does a regular pumpkin. And yes, you can enjoy them any which way you like. Pumpkin bread, baked with sugar, roasted chunks, etc. It's a worthy crop to grow.

      Yes. If if it were me going the stovetop route, i would probably steam it, so it would not be too wet when it's done. I've even seen people cooking them in microwaves.

      Bury the nodes as it grows, if one section starts rotting the rest will be fine.

      That's so sad. I never had a problem with vine borers. Are you growing them as ground runners or trellised? Mine grow wild all over and root as they go.

    i want to use pumpkin flour in an oatmeal cookie recipe. 2 questions: you used a 1/4 cup pumpkin flour... aprox what was the ratio of the pumpkin flour to reg flour? where the cookies crips or soft like most pumpkin cookies? thanks.

      I do cookies 2 ways. One way is to follow a pumpkin cookie recipe. I then rehydrate the powder until I have enough pumpkin the recipe calls for. The ratio is 1/3 cup warm water to 1 tablespoon powder, but it's not religious. They then come out like most pumpkin cookies. Initially crisp on the outside and a bit soft on the inside, but it really depends on the recipe. The other way I use it is entirely random. In which case I substitute flour to powder roughly 1:1. Just don't overdo it on the powder, as it doesn't have the same properties as flour. No gluten, etc. It's not meant to be a total substitute. This said, I would not doubt people have invented recipes using no grain flour at all, I just don't know them.

      I don't have a video on it, but this is what I mix up: 2 teaspoons ground cinnamon, 1/4 teaspoon nutmeg, 1/4 teaspoon ground dried ginger, 1/4 teaspoon ground clove. (You can substitute gloves for allspice). :)

      Hi Faie - I hope this helps: I use 1 tablespoon of powder to 1/3 cup of water. This will turn it back into puree, which can then be used for all sorts of things like pumpkin pie etc. :)

      No, I haven't. It would take a LOT of pumpkins to make a pound of pumpkin flour. I do wonder if it would work.

      It would depend on what you're trying to make. Pumpkin doesn't have gluten so making bread wouldn't really work but for other types of baking it might do

      I can't sell them, they may have cross-pollinated with other squashes of ours and the neighbors'. Will have to see how they come out this year, and then perhaps put up an etsy shop. :)

      Seminole pumpkin. (They're more of a winter squash than a pumpkin.) Store in the pantry! They are amazing. Everything in Fla needs refrigeration - these guys do not. You can make the same powder with butternut squash and even sweet potato. :)

      Yes, but I have no experience with either. There are sun dehydrators, that apparently work well in climates with low humidity and lots of sun. And some people dehydrate in the oven, but that depends on how low your oven temperature will go. Otherwise they get cooked. Some people put in oven, turn the oven light on and rig a small fan inside for circulation. I really don't know though if this would work for pumpkin, as the mush is really wet.
