We just got back from New Orleans and Cafe Du Monde. I had a photo f my dad sitting there having coffee and beignets in October of 1945 where his ship tied up after the war. I ate 2 orders.... yummm.
I have to add this... the little lady loved them but has a bit of trouble pronouncing Beignets in the traditional French way. She wanted to know if we could get Bug Nuts in San Francisco. Coffee with chicory went through my nose.

Nah, he's probably in the zone. Read about cook's in Las Vegas that did up to 1400 covers for Breakfast. Incredibly organized. Upscale chefs wanted to hire them- you can teach people dishes, but organization & speed is hard to come by. Culinary grads😂. They didn't want to change their jobs as they found the zone totally rewarding.

Can believe people line up for this, for what was originally just called a "donut". They only changed the name to make them all French and sophisticated sounding. Great marketing ploy.
Most food you eat from restaurants will be handled bare handed. Gloves probably end up more dirty because people are less likely to wash them and feel all the dirt, but people using their bare hands wash them all the time because they feel gross.
They put absolutely ZERO Care into that!!! Yuck!😷😷😷 i dont care how good people say they are ...no thanks! I cant believe they let people openly see that mess!!!
I like his technique of the dough hitting the side of the fryer before diving into the grease- this knocks off excess flour. Good job

No. It's definitely different from a donut. Beignets are a little harder than Donuts. Donuts are soft and fluffy but beignets arent.
