Santorini Tomato-Dill Fritters - A Greek Twist On Nonna's Zucchini Fritelle (e111)

- Buon giorno a tutti. In this episode, Nonna Mia, la nonna di tutti (everyone's grandmother), fries up a Greek twist on her zucchini fritters, along with her granddaughter Erika. Erika was inspired to make these yummy Santorini fritters with her Nonna while vacationing in Santorini with her sisters.
It's an easy recipe and a treat that the whole family is sure to enjoy. To make these, you will need the following ingredients, mixed in a bowl:
- 2 cups of finely chopped cherry tomatoes
- 2 eggs
- 1 cup of feta cheese, in lieu of grated parmesan cheese
- 3 minced garlic cloves
- 1/2 cup of diced red onion
- 1/2 cup of chopped dill, in lieu of the Italian parsley
- 1 cup water
- 1/2 tsp of baking powder
- 1/2 tsp of salt
- 1.5 cups of all-purpose flour
- canola oil (for frying)
When the oil is well-heated, Nonna likes to test the heat with garlic cloves. Once sizzling, spoon in fritters with a tablespoon and fry until golden brown on each side. Place fritters on a bed of paper towels to absorb excess oil. And that's it! Easy and so delicious!
Yield: about 3 dozen fritters
