    How to make Alkaline Rice dumplings at home?
    In this video, I will teach you how to make Alkaline Rice dumplings at home and the skills.
    [鹼水糭]
    糯米900克
    鹼水 1.5 湯匙
    油 1.5 湯匙
    粽葉 一束
    鹹水草
    白蓮蓉餡
    白相連150克
    糖 50克
    葡萄糖漿 60克
    植物油 50克
    1. 將白蓮子洗淨 浸兩小時 然後去芯。(可將去芯後的蓮子放入可入冰格的密實袋 加入適量水 放入雪櫃冰格雪一晚)
    2. 將蓮子放入飯煲 再加入適量水用煲糙米的程式 煮淋
    3. 將煲好後的蓮子倒起放涼備用
    4. 將放涼後的蓮子放入攪拌機攪至糊狀
    5. 將蓮子糊過篩備用
    6. 將蓮子糊加入預熱的平底不粘鍋 全程用慢火煮
    7. 直至蓮子糊開始變得濃稠 將糖、葡萄糖漿及植物油加入 繼續用慢火煮至完全濃稠及不沾手
    8. 將白蓮蓉倒起放涼
    9. 再將保鮮紙蓋在白蓮蓉的表面 放入雪櫃 24小時
    10. 糭葉及鹹水草預先一晚浸定 (處理方法,可見我製作鹹肉糭的視頻 • [鹹肉糭][綠豆及紅豆紫米] 軟糥綿綿,香氣... 或 • [鹹肉糭][綠豆及自家首創的紅豆紫米]-普通...
    11. 將糯米洗淨 浸3小時然後瀝乾備用
    12. 將鹼水及油加入瀝乾後的糯米中拌勻備用
    13. 將放入雪櫃 24小時後的 蓮蓉餡 預先分成每10克為一份
    14. 在糭葉上訴上一層油 摺成兜狀
    15. 加入2至3湯匙糯米 再把蓮蓉餡放置中間 再蓋上糯米
    16. 將糭葉接好 再用鹹水草將裹好糭的子 捆緊
    17. 將裹好後的糭子 放入電煲中排好 加入水直至蓋着糭子
    18. 蓋上蓋後按着煲湯掣
    19. 待電煲自動排氣完畢後 取出放涼
    20. 即食(可放入雪櫃雪凍後味道更佳)
    [Alkaline Rice dumplings]
    900g Glutinous Rice
    1.5 tbsp Alkaline Water
    1.5 tbsp Oil
    A bunch of dried reed leaves
    Cyperus Malaccensis
    Lotus Paste
    150g White Lotus seeds
    50g sugar
    60g Glucose syrup
    50g vegetable oil
    1. Wash and soak the white lotus seeds for two hours and then remove the core. (You can put the cored lotus seeds into a compact bag that can be put into the ice tray, add an appropriate amount of water, and put it in the refrigerator ice tray for one night)
    2. Put the lotus seeds into the rice cooker, then add appropriate amount of water and cook with the brown rice program.
    3. Scoop up the boiled lotus seeds and set aside to cool
    4. Put the cooled lotus seeds in a blender and blend until it becomes a paste
    5. Sieve the lotus seed paste for later use
    6. Add the lotus seed paste to the preheated flat-bottomed non-stick pan and cook over low heat throughout
    7. Until the lotus seed paste starts to thicken, add sugar, glucose syrup and vegetable oil and continue to simmer until it is completely thick and non-sticky
    8. Scoop up the white lotus paste and let it cool
    9. Cover the surface of the white lotus paste with plastic wrap and put it in the refrigerator for 24 hours
    10. Soak the dried reed leaves and cyperus malaccensis overnight in advance (For the details pls see my video of making Rice Dumpling • [鹹肉糭][綠豆及紅豆紫米] 軟糥綿綿,香氣... or • [鹹肉糭][綠豆及自家首創的紅豆紫米]-普通... )
    11. Wash the glutinous rice and soak for 3 hours, then drain and set aside
    12. Add the alkaline water and oil to the drained glutinous rice and mix well and set aside
    13. 24 hours later, divide the lotus seed paste into 10g per each portion
    14. Put a layer of oil on the reed leaves and fold them into pockets
    15. Add 2 to 3 tbs of glutinous rice, put lotus seed paste in the middle, and cover with glutinous rice
    16. Fold the reed leaves well and use the Cyperus Malaccensis wrapped rice dumplings tightly
    17. Put the rice dumplings into the electric cooker, add the water until the glutinous rice dumplings are covered
    18. Close the lid and press the soup button
    19. After the electric cooker is automatically exhausted, take it out and let it cool
    20. Ready to serve (it can be frozen in the refrigerator for better taste)
