This is a great recipe. I use to make candied ginger, my own varied citrus peels for fruitcake. The recipe was different, I would bring the ginger to a simmer 4 or 5 times with fresh water until it wasn't hot and then cook with sugar like you did at the end and then drain it on a wire rack. The sugar syrup was caramelised and a caramel coating appreared on the ginger. I made it on non stick
