My mother migrated to Brazil in 1929 with her whole family to work on coffee plantations in the interior of the state of São Paulo where I was born, she grew up speaking only Italian until she was 12 years old, so she absorbed all Italian culture and passed it on to my sister and me, I remember her making pasta exactly like you did. Watching her video reminded me of her. Thanks for sharing!

What I like bout italian food is it's simplicity. Basically everyone can do it if they have basic cooking skills. Yet it still tastes good.
You also need quality ingredientes. If you make this dish with Parmigiano Reggiano is the way we eat it, if you use the so called Parmesan sold in the USA it's completely different. Also the quality of pasta is crucial (bronze cut or not) and the quality of butter. It's not so easy to replicate our dishes in the usa 'cause the majority of food there is low quality industrial processed food

It reminded me of an old cooking show from Canada (I’m ‘murican) that I somehow came across on this site a couple of years ago titled _“Cucina Italiano con Pasquale”_ (Italian Cooking with Pasquale on the actual video) from the early 80’s, and this older gentleman, Pasquale Carpino, was a classic Italian chef and he had such a great, easy going, natural and experienced approach to cooking his amazing food, (he makes egg noodles with clams in one vid) and he even breaks into song sometimes! You two might look him up for both inspiration & for fun❣️🍝🍷
If you can boil water in a pot, you can make this dish.

It's just butter noodles... With some cheese. This is probably one of the easiest things you could make and not mess up

Amazing simple and tasy recipe, I just made and ate it, it tasted great. In theory, you can add different types of cheese to this dish. No need to mash the butter, it naturally has a creamy consistency. Thank you, Italian cuisine is just delicious

Pasta water is such an underused ingredient, because it has the same properties as cornstarch slurry, but is treated as a waste product.
Reusing the starch of the pasta to make sauces is such a cool concept.
So simply and so good.
