I attend a Culinary Arts program and our instructor is one of the most skilled and talented chef I’ve seen first hand. When we asked him what he’d make for himself we expected to hear appetizing french words and a glass of fine wine, he said his usual meal is a meat lovers Red Baron pizza, 2 cigarettes and SunnyD. I just buy brand new cars straight from the lot, its easier to keep up with regular mx and make the car last 10 years without a single major repair not to mention the piece of mind and the overall similar cost.

If the story is somewhat related to what is being cooked like "this was a popular dish during the Great Depression because X was unavailable at the time " then fine, I've at least learned something. The Industrial Revolution and its consequences have been a disaster for the human race. They have greatly increased the life-expectancy of those of us who live in “advanced” countries, but they have destabilized society, have made life unfulfilling, have subjected human beings to indignities, have led to widespread psychological suffering (in the Third World to physical suffering as well) and have inflicted severe damage on the natural world. The continued development of technology will worsen the situation. It will certainly subject human beings to greater indignities and inflict greater damage on the natural world, it will probably lead to greater social disruption and psychological suffering, and it may lead to increased physical suffering even in “advanced” countries.

Yeah, I kind of figure it's like a mechanic's car, usually they get tired of working on cars so much that when their own breaks down, they just do the cheapest and easiest fix possible. Usually involving a mix of duct tape and WD40.
In a way, being a mechanic means you get to really know what counts as "barely functional" in a car, and you just keep the car like that, much like I'd imagine chefs get to know what is "barely safe to eat", and will then make only that for themselves.

Fun fact: to make fries, you actually want a dull knife. It leaves a rougher texture on the potato which means the fry will be a bit crunchier.

Their benefit is that they soak up a lot of heat and radiate a lot of heat too - which makes them ideal for searing stake and potatoes (and is reasonably non-sticky).

Having been a chef previously (before things turned sour during the pandemic), I can confirm that it is a freaking stressful job and that you need a coping mechanism 🤣 Seriously, when I am at home, I just want to cook something simple. The only advantage as a former chef is that I have some tricks that makes my life easier when I have to prepare dinner for myself. I also have something like dozens of spices and that improves any dish taste with no efforts.

Edit 4/27/23: Wow, 9.5k likes!? Thank you! Wanted to give an update... I went from being just okay at cooking to now where I own a couple more professional knives. I can now make 4 component meals (main, 2 sides, and a sauce) with confidence. I have several cooking tools and appliances. My gf asked me to marry her when I made homemade pasta dinner last week lol. Shit, I make my own bread and pasta now too. Cook with confidence, everyone! The food can smell the fear haha

    Simple pizza recipe.
    Preparations (for two pizzas):
    Dough:
    Water (1 glass)
    Wheat flour (2 cups)
    Salt (teaspoon)
    Sugar (teaspoon)
    Instant yeast (2.5 teaspoons = 15 grams)
    Sauce:
    Water (0.75 cups)
    Black pepper (0.5 teaspoon)
    Tomato paste (4 heaping teaspoons)
    Garlic (1-2 cloves)
    Onion (50-100 grams)
Basil (I have dried, I haven’t tried it with fresh, 2 teaspoons)
    What's on top:
I did without cheese, it was also delicious thanks to the sauce.
Cheese (some kind of easily melting. You can take 2 different ones, but so that they are different, 1 is salty, the other is not very salty)
    Sausage (peperoni)
You can add a few slices of tomatoes as I did
    Cooking:
    - 1. Knead the dough -
Mix water with sugar and yeast.
Pour flour into a bowl and add salt
Gradually add water to the flour, kneading the dough.
You need to knead for about 5 minutes. If the dough looks dry, add water; if it spreads quickly, add flour. You need the dough to be elastic (when you poke it, it partially takes back the shape)
Coat the dough with oil, wrap it in polyethylene or put it in a container and leave it for 2 hours in the room or overnight in the refrigerator.
    - 2. Making the sauce -
In a frying pan, fry the diced onion and finely chopped garlic for about 2 minutes (the onion should not be fried).
Add tomato paste, fry it for about a minute, stirring
Add basil, pepper, salt, water. Stir and leave on low heat under the lid for 10 minutes. If during this time the sauce has not become thick (like porridge), boil without a lid for some more time.
    - 3. Baking -
Cut the sausage, rub the cheese.
Spread the flour over the work surface. Cut the dough into 2 pieces. Make a round pizza shape. Check out UA-cam for pizza dough rolling techniques. If it doesn't work with your hands, do it with a rolling pin. If there is a pizza mold, you can use it. The shape should be 0.5 - 0.7 centimeters high.
Preheat the oven to maximum temperature.
Add flour to a baking sheet and put the dough there.
Put the dough to the oven without filling. When the dough begins to rise and dries a little on top (it won’t cook completely, but only dries), take it out of the oven and add sauce, filling and cheese on top.
Put the pizza to the oven. When the crusts start to turn brown, keep the pizza in the oven for another minute or two and take out the pizza.
Bake for as long as you like. Experiment, because you have leftover pizza dough
I dont know why did I write this recipe. I spent a lot of time on this (30 min), but it was a pity to stop.

The $300 Japanese knife is the most accurate thing. My brother started college like 3 years ago and my mom gave him an allowance to buy whatever he needed for class and living. He straight up bought the knife and took off.
ps. the only other thing he bought was food because he soon realised a Japanese knife by itself won't make the food, if there is no food.
