TURKEY DINNER for TWO - Bonita's Kitchen

    Ingredients:
    1 or 2 turkey breasts 2 cups stale bread crumbs
    1 tbsp dried savoury 2 tbsp butter or margarine
    1 medium onion, chopped ¼ cup cranberries
    1 apple, peeled and cubed 1 tsp sea salt
    1 tsp pepper 1 tsp onion powder
    2 lengths of cotton thread
    Veggie side:
    4 medium potatoes 1 small turnip 1 tbsp cream
    2 medium carrots 1 tsp sea salt 1 tbsp brown sugar
    Bunch green beans, broccoli 1 small onion
    2 tbsp butter or margarine 2 tbsp flour or corn starch
    1 cup turkey or chicken broth 1 tsp turkey gravy mix
    Method for Turkey:
    First debone turkey breast and cut through the centre to open flat on a plate, then sit aside until ready to use.
    In a small bowl add stale bread crumbs, savoury, ½ tsp sea salt, ½ tsp pepper, ½ tsp onion powder and toss together.
    Then peel and chop onion, add 1 tbsp to the bowl and chop cranberries in half, then peel and cut in small cubes one apple.
    Then toss all of them in the bowl with the other ingredients, after adding 1 or 2 tbsp butter and pinch all the ingredients together by hand or with a spoon.
    Then add one cup or more of the stuffing on top of flattened turkey breast and pat down.
    Then the end closes to you roll outward until the turkey breast is rolled and put any stuffing back inside the turkey roll that falls out.
    After that, take a piece of the cotton thread and wrap it around the turkey roll and tie it together.
    You will need a roaster with lid, add stuffed turkey breast roll, continue on to the other piece of turkey if you are making two or more.
    Then add small pieces of butter inside turkey skin to have a buttery taste, a pinch of pepper, salt and onion powder.
    Add chopped onion to the bottom of the roaster and 1 cup broth.
    Preheat the oven to 400ºF and bake for 60 minutes or until done, 30 minutes uncovered and 30 minutes covered. When cooked let rest and cut in slices.
    In a saucepan with water, start to boil, add 1 tsp sea salt and one small onion, then peel and chop veggies, cut carrots in slices, turnip in small cubes, potatoes in half and parsnips in chucks. Let boil on a medium heat until fork tender, steam green bean or peas for a couple of minutes before ready to use.
    In a another pan add 2 tbsp butter and 2 tbsp flour and mix around, add hot turkey drippings and veggie broth from your cooked veggies, add turkey gravy mix or chicken, mix together until gravy is thickened and smooth.
    Back to veggies, add potatoes to a bowl with butter and cream then mash, or any seasonings you like. In another bowl toss carrot, parsnip and turnip together with butter, ½ tsp pepper, 1 tbsp brown sugar and mash.
    Bonita’s Tips: Serve turkey roll, with a helping of all veggies and topped with a nice scoop of gravy. Then a side of cranberry sauce or mustard pickles, picked beets, fresh hot rolls!

    Hi! I'm old, sick, & confined to bed, waiting to join my dear husband of 50 years in his nursing home where he's dying of Parkinson's & dementia. Thanksgiving day my social worker left her 4 children & family to bring me her mom's complete homemade turkey. Homemade bread, mashed turnips (don't see that much), pumpkin pie. This is a sad time for me but I thought I still have much to e thankful for, including you, love!

      @@davestelling My husband's name is Dave! He was a lawyer, author, & rescued many abused dogs. I guess your prayer worked--I just got a call that they got an emergency space for me because he's slipping away. An ambulance is coming for me Thursday. We live I'm Kingston, Ontario. We loved the Maritimes when we visited & regretted we never got to Newfoundland. Such strong, good people there. Hugs to you, Dave!

    Good morning my friends Bonita and Raymond Hussey. Happy Thanksgiving to you and Raymond and your family. I'm recovering from another overnight stay at Hospital Friday night. My legs and back and sides went numb and I had trouble standing and walking. The doctor in emergency said it was my sciatic nerve acting up and to just take it easy as there isn't much you can do for that. Thank you for sharing this beautiful turkey dinner 🦃.     What a delicious looking meal! I live alone and like the idea of making a holiday type dinner in a more manageable portion. I like how Canada's Thanksgiving is so far from Christmas too. With it being in late November in the US it seems like you don't have a break for about six weeks between Thanksgiving, Christmas and New Year. Its almost too much!

    Unfortunately, my son is allergic to dairy so I can't add milk to the mashed potatoes, but he never cared for them until I started adding turnip and parsnip and now he gobbles it up (pun intended). It never occurred to me to cook just the breast like this. Such a good idea. I can't wait to try it. Looks so pretty when you carve it.

    Great idea! I make southern style cornbread dressing with sage which I would use. I love the stuffing/dressing that I have made for 50 years now! The single breast is a great idea. Thanks!!

    I have never cooked a full bird because I only enjoy the white meat. It is so much faster, cleaner and no waste when cooking a boneless breast! When I do my mashed potatoes, I use yellow potatoes, sour cream and cream cheese. It is decadent and delicious! Happy Thanksgiving to you both🤗🤗

    I'm sooooo dumb sometimes - I thought for a bit that this must be some kind of rerun of a year old video..... until I looked up at my wall calendar and saw that tomorrow is Thanksgiving in Canada - lol - GREAT recipe and procedure to 'butterfly' the big turkey breast to stuff it... like a big pork chop etc. I will definitely give this one try. A fantastic way to create a full "T"-Day meal for just a couple or even a single person, at the holidays or anytime of the year. Thanks again.

    What a wonderful looking turkey dinner.
    I like turkey, just no a big fan of leftover turkey dinner for a week after.
    I do like hot turkey sandwich, turkey soup, turkey pot pie, turkey stew... JUST NOT FOR DAYS AFTER DAYS AFTER A BIG TURKEY HAS BEEN COOKED!!! I am not a fan of cooked Turkey after it has been frozen.🦃🦃🦃
