- this is from Marcella hazans cookbook the essentials of classic Italian cooking I got it as a gift from my uncle about 20 years ago and this dish is always by go to because its so simple quick and delicious
ps i did call them noodles once but I do know better and am just bad with words.
Ingredients.
1 pound pasta
Salt
1/3c extra virgin olive oil
2 tsp garlic
Chili pepper to taste
2 tablespoons parsley - Навчання та стиль
Tip: boil the pasta in a much lower quantity of water so that the concentration of starch of the pasta water is higher and the water-oil emulsion becomes thicker and way richer

Did this recently with Mac and cheese when I didn’t have milk. I mixed chicken broth, veggie better than bouillon, and way less water. So much flavor and so creamy.
@@somerandomguy9156 you can also try to do not cook the pasta till the end, but remove it from the water and put in the pan 4/5 mins before and add a bit more pasta water in the pan while it finishes to cook.
The result will be a creamier sauce.

Aglio Olio is literally just garlic and oil. People add lemon, parsley, chilli flakes, oregano, cheese or whatever. And it's fine, do what you want but it's not Aglio E Olio at that point.

I never salt the water. It’s a useless waste. Add salt to the noodles when they’re ready. Makes tastewise absolutely no difference.

There is minimal skill in Italian. I'm a retired chef, the Italian chefs were always seen as lesser. Just covering up their mistakes with sauce and cheese.

Garlic and chile flakes is everything, I add lemon zest and 🍋 juice! It's a game changer, having citrus trees is a blessing!

Same here, I make this all the time with lemon juice and grate some fresh parmesan over top. Those flavors all compliment each other so well.
Lemon takes it to the extra level, I lick my plate clean like a shameless barbarian cos it's just so delicious
It's 4 a.m. in the morning and my mouth is watering 😋 I'd sprinkle a little parm cheese on at the end jus to add a lil razzle dazzle for my taste buds 😂

On Sundays after a big Italian dinner. at 1:00, at about 6 or 7:00 my mother would cook 2lbs of pasta with garlic n oil just as yurs ! We would eat it just like that with graded Romano cheese on top. Omg, what great memories of my childhood! 😇 Thank u ❤️

@@danielmartens156 because it contains the starch of the pasta, and combined with your sauce in the pan just before adding the pasta (al dente) gives a "creamy" effect ! you have to mix it during a few minutes, look at any video, you will see that they add a small amount with a ladle into the pan just before adding the pasta into the pan... in Italian "la spadellata" !

Pasta water is important, not because of the insignificant amount of starch it has, but it helps create a sauce by bringing the ingredients together.
I like shred lemon in it magnificent !!!
I also love to add some anchovies* (those in olive oil) or Colatura di alici (anchovies' colatura) if I feel fancy 🤤
*If you add them in the oil together With the garlic and chilly, they Will melt leaving the MOST flavorfull oil ever.

An older Italian gentleman told me this exact recipe years ago and I've been making it every since. I never wrote down the ingredients, but instead gave it a name I could remember: OG Triple P (olive oil, garlic, pepper, pasta, parsley) 😅😅

After a couple of people being really upset that I called the pasta a noodle once in this short video. I would like to inform you pasta is a noodle😮. The dictionary states a noodle is “a strip, ring, or tube of pasta or a similar dough, typically made with egg and usually eaten with a sauce or in a soup.”
And while it’s common to call noodles from Italian origin pasta they are in fact noodles. So for the ignorant people typing in all caps. You’re wrong and I hope you have a wonderful day.

I'm a totally foody. And thought my DNA has part Italian in it, as I Loooooved everything Pasta.
(Still do, but I have to have a GF diet for my health, so things have shifted. Let's say, I am part Asian now, or Mexican 🤔 well, where ever one eats a lot of rice😂lol)
But my homeland is Germany and there we call any pasta noodles 🤷🏼♀️
It wasn't until l lived overseas that l stared calling Italian noodles pasta.
But sometimes l catch myself in moments that l say noodles instead of pasta.
I mean noodles are describing rather asian type dishes (Where I'm living currently.)
And it is handy to have a differentiation.
But in the end it is all the same fricken thing😂

Totally agree. And the parsley/red chili flakes are totally preference and not necessary unless that's what you like.
There's no parmesan in aglio&olio. Then of course to each its own.
