Aww thank you Karen. This is a very traditional recipe for Nicaraguans. Adding the cornmeal was a way to get extra vitamins especially when food was scarce.

Hi! You can definitely use cinnamon powder instead. I would recommend Saigon cinnamon since it's more potent & similar to the flavor in cinnamon sticks. 2 tablespoons would be sufficient.
