This swimmer is practising what is often called explosive breathing - when you exhale as you approach the point of inhalation. The alternative, which is usually advocated, is to employ trickle breathing - where you are exhaling steadily throughout the stroke either through the nose, mouth, or both.

Thank you so much - this is very helpful. I'm watching in .25x speed and this is enlightening. Can you help me with one question. At :19 it looks like the breath is over and head back down well before the elbow is at its peak (so an early breath). But then at :48, the breath seems to come later, after the elbow is at its highest point. I'm sure there's always variation - but should we "aim" for one or the other? Thaks!

when your hand connect to the hip and then recover. inbetween time you have to exhale and then put your head down. he is doing elbow bend recovery.

beginner like this guy should focus on the body position in the water, he's legs and hips so much drops and he got fins, watch in 0:23 - so bad, with fins he should be straight under the surface and not like this

Those fins do help a lot. If you have huge feet, you're starting at an advantage.

Head needs to be down farther. You are creating unneeded drag by keeping your head so high above the water.
