Mince and Tatties with Skirlie | Scottish Comfort Food
Вставка

- You've probably heard of the traditional Scottish dish of Mince and Tatties, but maybe Skirlie is a mystery to you. I had never heard of Skirlie until recently when I got a request to make it. Skirlie is a simple side dish made of oats - it is quite dry and goes very well with the gravy in mince and tatties. The tatties are simply mashed potatoes, and the mince should be the best quality minced beef you can get. Skirlie is very easy to make, and very, very tasty. Skirlie is probably best known in the north east of Scotland - and along with mince and tatties, it's total comfort food.

My God your chopping skills are impressive.
I wish I could double-like this! My mom watched the video and immediately made it for her supper (she already had the mince in her freezer). She is so happy! When mom is happy, I am happy. Between this and custard tarts, we are doing just fine in the colonies. :) Thank you!
Excellent!
I just ADORE Mrs Keef. An intelligent dash of encouragement with a little pinch of gentle irony, love it love it.
A recipe my scottish nanna RIP used to cook when I was a child. Good old mince and tatties always enjoyed with a piece . Thank you for sharing. X
My Stepmother was from Scotland, and she made Mince & Tatties at least once a week. But her version had a lot of green peas in it. It was delicious.
And carrots 🥕 😋
I've eaten "Mince and Totties" all my life but i've never heard of Skirlie. Really good video!
Mince and totties is something every Scottish granny just makes the best.
This, Mum from Greenock, and Grandad from Cruden - bang on [alleged] skirlie territory.
Skirlie is great .just had tonight
More north east Scotland , and mealie ( white pudding ) has suet in it with the onions and oats , both delicious
Made skirlie for dinner last evening, with the addition of about four slices of crumbled crispy bacon. It was delicious, and hearty enough for a full meal on its own. This one goes in the 'make this often!' file. Thank you, Keef!
My great-grandmother, rest her soul, used to make this for us. I'd never tasted anything like it before being a mere Virginia lad.
Mrs Keef cooks is a little gem , love to you both as always , this looks so tasty, thankyou xxxx
I'm glad I found your video I'm sure my family would like this Thank you😎
You two are adorable! First time watching and I really enjoyed.
The "Skirl" of bagpipes!!!!! Scottish enough for you!
Fish & Chips, Haggis on buttered bread and the best steak I ever had was in Scotland. Those highland cows are tasty.
I like the idea of haggis on bread!
Lovely👍🏻
Thanks for sharing this video recipe.
I love watching you enjoy eating your creations with Mrs. Keef Cooks. XO
Love your interaction with one another🤣
I grew up on this, still one of my favourite dishes. My daughter now serves it to her family, who wouldn't love it, mince and tatties from a Canadian family. I pour my mince over my potatoes and add peas.
Good job for a Yorkshireman! I'm an Old Fart displaced Scotsman in Southern California. Butter always works in the Skirlie, but I just scored Atora Suet off the Internet! I add a stock over water, depending on the meat it is going with.
Apart from that, you are right on, Pinhead Oats are a must! The only other critique, you didn't make enough! 😉
Loved the video, all the Best.
Half this video is just watching you two eat but I love it.
Will try skirlie.
Love shirlie I use it to stuff chicken
Proper recipe - exactly as it should be - well done
I love watching the two of you together.
The mince and mashed potatoes was the comfort food of my childhood. My mum would also serve it with Heinz baked beans and then I would mash all 3 things together on the my plate! Delicious! I haven't eaten red meat for 11 years so it has been a long time since I have eaten mince. My dad used to put the leftover mince into a pie dish and either top it with puff pastry or mashed potatoes, which was also lovely on a cold winter night. Your video has brought back good memories. Thanks so much.
Looks so good!
I’m gonna try this. Looks great
You could have used the fat drained from the mince... I always save the rendered fat from beef, pork & chicken in jars in the fridge to use in cooking... it's great...
Well done you two! Such a joy learning more of me heritage.😃
Love skirlie my mum always made it with mince and tatties I never knew how to cook it mow I know thanks for sharing looking forward to trying it for myself
Skirlie also known as pan haggis. Dough boys are another thing, dumplings made with suet and cooked in the mince. Oatmeal not oats btw pref pinhead
I really love traditional Scottish food, and Scotland has such fine produce. I had a bad example of skirlie once in Aberdeen which tasted like warm gravel, but cooked nicely like this it is a fine staple indeed. Mrs Keef has impeccable timing!
Cheers Pete!
Looks amazing! :)
Great recipe. Thank you so much. It looks delicious
Mr keef love the new style of chopping your spuds!! . Lovely dish
Bwahahah!
KeefCooks hi Mr keef Chris the butcher put me on to your channel last year and watching you is contagious. Love your style of cooking . Would love a shout out Mr cooks. Hope you and mrs keef cooks a good weekend. X
Thanks for the recipe, especially for the Skirlie. Did it with bacon and some sausage and it was simply great.
Good ole' meat and potatoes comfort food, but not the usual kind. All you need is a nice tall glass of ale or a shot of whiskey? Thanks for sharing...proud of my Scottish-American heritage. The McGaffeys who came here from Aberdeen by way of Northern Ireland and landed in Portsmouth, NH in 1721, one of them wounded at the Battle of Bunker Hill! Enjoy~ Long live Scotland!
i have cooked your scotch broth so many times this last winter, its been my work life saver !
My grunnie would use the saved up fat from cooking bacon, sausages etc and beef dripping. Skirlie is great with so many foods not just mince. Fish supper and skirlie or a mealie puddin is to die for. Thanks for upload. :)
Looks tasty! Going to make this soon.
Thanx! Loved ur video!!! Thank you for explaining this to non -UK audience! 💕👵🏼
It looks very tasty. I will try it sometimes.
Enjoyed that marvelously!
My Mum made this a lot. She also put turnip and parsnip i hers. I used to mush everything together and put HP on it.
"Peel and chop the veggies" -- bam! Nice one. :-)
The only way to do it!
Where can I buy one of those magic knives?
Wonderful!! ❤❤❤
In the U.S., that style/version of oats is called, "Steel-Cut" Oats, or sometimes "Irish Oats."
Sounds delicious!
I am *so thankful* to see how your Skirlie went sideways because the recipe I went from didn't say anything about pre-cooking the pinhead oatmeal, so it was like I were a horse when I tried eating it. Now I know better, of what to do. Thanks bunches! Oh, and am a new subscriber, following you over from "What's for Tea?" YTer.
Ah, a taste of the auld country! I've never made skirlie but I think I need to give it a try. Thanks, Keef!
It's worth a go!
Love your name lol :)
I haven’t had skirlie but my late Nana used to make a mean mince and tatties. Done well it’s lovely, simple, hearty comfort food as you say. I’ll have to try your recipe. If it tastes anywhere near Nana’s I’ll be happy as I’ll always associate it with the lovely lady she was.
Looks good and definately worth a try. I think that this recipe was a good way to make food stretch a bit further when 'times were hard'.
Yep, definitely a filler!
glad to learn how to make skirlie!! you and your wife are fun!
Great recipe! Thanks for sharing. I never saw celery used but sometimes I use peas to bring some colour to my mine and tatties 😁. Love from Scotland!
Just happened upon this by accident. Great show and quite interested to try this.
Haha great post. Never heard of any of this but I sure will try bc it looks amazing 😉
Loved, Loved, Loved this episode. I must make this, and serve it with a wee dram!
Cheers Keet!
Very nice Keef.
Skirlie is more commonly known as Mealy Pudding all over Scotland and has slight differences (seasoning and possibly with the addition of herbs ) depending where you live or your local butcher has his own recipe. It is used as stuffing in roast chicken among other things you can get it as white pudding (battered) at chip shops . It is very much served on the dry side and requires plenty of gravy in the mince for soaking up mm yummy.
I would mention that unlike England we don't use as much dairy (just a little) in mashed potatoes we generally prefer the fluffy clean earthy flavour of potatoes than for example the yellow paste that James Martin might serve up. I often see fresh boiled or steamed vegetables drowned in butter in England but every to their own. Yab-adab-adoo .
Gonna try the mince!!
Fabulous sir
My granny used to cook this up for me when i visited from the South, she said it was a staple Greenock dish........i was young didn't know it was was mince and mash, but tasted blooming great..
Good timing, was just planning my dinner and had no ideas.
Hi Keefs and Mrs Keefs. Looks Good, 😊.👍 ♡
Made tatties and mince tonight from this video. So good! Didn't make the gravy but still it was delicious! Thank you!
Never saw oatmeal as part of a savoury dish... Looks delicious 😋 can't wait to try it out. Thank you Keef 👍
Oatmeal is a common cereal ingredient in Meatloafs.
Have salt in mine every morning 👍🏻🏴
Looks so delicious Keef, I will put this on my to do list
Great!
The carrots are not optional, Celery no!
Don't use a frying pan, use a proper pot.
Fry the onion,
Brown the mince,
Float the fat off (pore cold water in the pan that fat condenses on top)
stock I use 2 oxo cubes, add to half the pot fill with water.
Bring to the boil and add the carrot's.
Boil untill the mince have reduce (about an hour) to a thin gravy.
Serve with potatoes, and peas.
Crack an egg in the pan right at the end of cooking - egg fried skirlie - yumlicious
Will try skirly. Great vid.
Good luck!
I love Skirlie. After being introduced to it, we now cook it for Thanksgiving.
Awesome recipe.. probably great with a pint of Guinness..thank you..
The pounding magic jerked out of me a good laughter...I don't know why. 😂 But it's enough to get my attention! It's so mouth-watering... I had no idea one can use onion with oats and I love oats food. Thank you very much❣
That looks quite tasty.
That's the same way I chop *my* veggies! Saves so much time in the kitchen, I wish I'd thought of it years ago.
You're not wrong Rich.
When I do my mince and tatties. I brown my mince put in one oxo cubes. Put in the onions then put in my gravy. Put in two pudding spoons of broon sauce. Then carrots frozen peas. Leave for 45 minutes then check it. Put in more salt and pepper. Then put on the tatties. Then once ready eat and enjoy
This looks so yummy! Again, I adore your Mrs Keef Cooks, Chef Keef!! I LOL when she asked for something green! You should’ve pointed out the celery bits! LOLLL
Pinhead oats shld be soaked overnight to swell and soften. We had porridge every morning before school made with pinhead oats. Xx
love traditional Scottish food used to spend my whole summer holiday's on The Isle of Skye when I was young as my Auntie lived there. The fresh salmon (not a big salmon fan) tasted amazing
Aww, lucky you!
yep lol had to get my ten pence in hahahahaha. will defo try this recipe :)
Thanks for this, the skirlie looks very interesting. I'd be tempted to switch the mash for bubble & squeak, just because both dishes are named for the sound of cooking. Really like the idea of using it to stuff a bird.
Would love to taste it!
Thanks, Keef. The skirlie reminds me of a bulgur wheat pilaf I used to make in my lacto-ovo vegetarian days.
Yeah - pinhead oats are similar to bulgur.
I have never had skirlie. But mince and tatties are 🙋😍
I'm thinking steel cut oats would be a good comparison here to what you had in the pan.
Yeah, I think they just need to be small bits.
Pinhead oats "are" steel cut oats. Same beasties.
love the foof . love you, and REALLY LOVE YOUR OTHER HAFT. Thanks dan t palm springs calif USA
Tha' cooda poot sum chopped parsley or chives in the tatties to green 'em oop to please t'missus.
But then I'd get everybody in Scotland whinging about this arrogant Sassenach stealing their food and Frenchifying it, ye ken?
I'm Scottish and I've never heard of skirlie but I'm definitely going to try it
It deserves to be better known. Good luck!
Every culture has its own version of mince 😍. Im Hispanic and here in South Texas we call it "picadillo". It's ground beef and you pretty much add whatever veggie you have on hand. For seasoning I add salt, pepper, garlic, cumin and a bit of tomato sauce and beef bouillon. Serve with a side of Mexican rice and pinto beans and flour tortillas =)
And if you stick a teaspoon of chilli powder into your version, that's pretty much Brit chilli con carne.
I am glad to see this video and learn about skirlie. I am a Scottish descendant across the pond who is trying to get in touch with my Scottish heritage and I am wanting to learn more about Scottish foods that I can try to cook myself. I’m not sure where I could find that type of oats in the US as I have never heard of them here before.
I had never heard of skirlie, but the recipe from Aberdeenshire family was called stuffing and used in duck or chicken......delicious !
My dad was from Scotland and the first phrase I learned as almost a baby still was och aye the noo! 😄
I want your magic knife. Looks good!
saw skirlie made on Masterchef and just have to try it once , already Love my mince and tatties
subscribed
I saw that but it looked a lot like porridge and then finished up on the plate as deep-fried or baked bonbon. Weird!
i made the skirlie tonight, very tasty, probably under cooked them a little but i liked the texture a little crunchy. never heard of it before
man, I'll bet that skirlie goes really well with breakfast too!
could probably even stuff it in a turkey...
Yep, it is used as a stuffing, apparently
Great chopping!
It just comes naturally!
For years I have made mince, not a gourmet I brown meat and onion, put in a can of sliced carrots, and add BISTO Gravy mix ( public has this
Let simmer stirring occasionally ....really tasty !
I never used to like skirlie, until my sister made it, don't know what she does different, but my sister's skirlie is great.
Must try the oat thing.
Yummy!
Skirlie is one of my favorites to make. I use chicken stock instead of water and I also add garlic, chopped fresh parsley and a little dash of nutmeg. It's also better reheated the next day
Now I know where cottage pie came from...place the cooked Mince in a dish...cover with the Tatties and pop it in the oven for a bit. The oat dish look tasty. I love these types dishes. Thanks for sharing.
scratch lines from centre to outer edges for the thatched roof look too :)
Lecker 👌 Great video.
You have sorted my dinner/super out for tomorrow. I was going to make Corned Beef Hash or some baked fish or something else but now it is going to be Miced Beef and Taties. I saw this recipe on another UA-cam thingy by some lovely Scottish Lass and inqired about the Oatmeal substitution. She said Porrige Oats was OK.
Huh. My Gram used to make skirlie (with tallow) all the time when I was growing up, and it’s amazing smeared on buttered toast. I had no idea it was Scottish.
That was fantastic Keef. The Ration Assassins used to feed up Mince and Tatties when i was based in Edinburgh, normally on Wednesdays for some odd reason. Loved it. Skirlie is a new thing for me, ill give it a go. Cheers Moose.
Who are The Ration Assassins Moosey?
