    I hope you’re having a great day so far! Welcome back to what’s for tea, and I hope I find you all well.
    Today I’m making a traditional Scottish breakfast sausage :) Known simply as ’square sausage’ although in other parts of the country you may hear it being called ‘Lorne’ or even ‘slice’ Most commonly eaten in a bread roll, sandwich or a cooked Scottish breakfast. My mother used to stew these in gravy with onions and carrots for tea at night :)
    I’ve listed everything I used below…in case you want to give it a go for yourself.

    I used a 2 pound loaf tin (this will give you 9 good slices)
    450g/1lb Minced pork shoulder (you’ll want quite a high fat content)
    450g/1lb Minced beef (again, you’ll want quite a high fat content)
    180g/1cup Butchers rusk (your butcher should be happy to give you some!) or dried breadcrumbs
    1 Teaspoon Ground coriander
    1 Teaspoon Ground nutmeg
    3 Teaspoons salt
    1/2 Teaspoon white pepper
    1 Egg
    200ml/about a cup Chilled water (I only used 100ml but you may need it all)
    Serving suggestion **serve inside a bread roll** :)

    Hi, This is the best square sausage recipe I have used . I made 4lbs of sausage last night. I have just finished my first 2 rolls an sausage with brown sauce. I cant wait to be hungry again. I am sure I will be having another 2 before the nights out. Perfectly balanced taste and texture with the seasoning just right. Rer.       I am gobsmacked! I have been on this planet a long long time. This is extraordinary, the first time I've evér heard of anyone and I mean anyone, making Sqare or Sliced Sausage at home. Or. Who the hell makes their own Square sausage? You, and perhaps a Butcher. If you find your rolls are hard and would still like a roll, sprinkle some Milk over the top, then in the Microwave for 6-10 seconds. You can count the Seconds out loud. This way you won't go over time.Put a small amount of milk in to a saucer The Rolls :- Dip your fingertips in, then shake over the Rolls like a sprinkler. Remove and STAND . They will taste as fresh as freshly made.

    As a Scotsman living in England I love watching your videos, memories of my childhood came flooding back when you used Mcghee's rolls as I grew up in Murano Street in Maryhill opposite the factory.

    Although I'm an Englishman, I've never understood why the traditional morning fry-up is known as an "English Breakfast", especially when the best examples I've ever eaten have all been in Scotland. I also have Irish friends who maintain that an Irish Breakfast is also equally as superb as a Scottish one. Since I now live in the food desert of Sweden I have to roll my sleeves up and make my own sausages, sausage rolls, pork pies, homed-cured bacon (green and cold-smoked), steak & kidney pies, bread, crumpets and Derbyshire oatcakes (a very different product from the Scottish ones) among many other nostalgic delights. I frequently have local Swedes knocking at my door and licking their lips hoping that I'll give them some of my home-made British food! I have not yet attempted to make any square (Lorne) sausage, but your mouth-watering recipe has me longing for some. Time to get my sleeves rolled up again. Thanks for the wonderful videos. I never get tired of listening to your lovely voice.

      As a Scotsman at a wedding in Dublin, the thing I loved most about my Irish Breakfast was the slice of Red Pudding. I hadn't had Red Pudding since I was a wee boy living in Leith. Red Pudding as some of you may know is Liver sausage, doesn't sound appealing I know, however it is very well seasoned so, very tasty.

      @@alangeorgebarstow Aye, White Pudding is also a Scottish staple. If you ever get to Edinburgh, the best White Pudding IMHO is to be found at the Corbie Cafe in Davidsons Mains.

    From Paisley and lived in US for 10 years. I’ve made your recipe a few times and it is very authentic. Reminds me of Saturday morning breakfast from the local newsagent / roll shop. So tomorrow having some American friends round for a roll and sausage, fried egg and tattie scone. Magic! Thanks a lot!

    Thank you for this! My dad used to make this in every country we lived in abroad, but he’d persuaded a butcher to sell him some of their seasoning blend so he doesn’t actually know what’s in it. Now to find the right kind of rolls...

    Made these last night and just had one in a sandwich with HP sauce. Delicious thanks for this recipe. £7 for the ingredients but worth every penny. Organic meats and egg I know exactly what is in it and no preservatives.

    We lived for so many years in Africa and my Mum & Dad really missed Scottish cooking. In the middle of summer my Dad would make 'potted haugh' which he would set in ramekins. We used to eat this with salad and we loved it. He even taught our local butcher how to tie up a roll of brisket so he could make scotch broth and we would eat the brisket with boiled potatoes, carrots and peas. Both of my parents would have loved your channel, as I do. Thank you for sharing and teaching us our culinary heritage. You are a diamond!

    Just made another batch of your square slice. Thank you for the great recipe and so easy to do. TIP for others having a bash at this, in order to taste to see if your seasonings are to your taste, take a tablespoon of the mixture and fry. This way you can adjust. It’s easier to add more seasoning but not remove. I tweaked mine a little to taste more like the butchers I get my square slice from when back home for a visit as I like it with a little more white pepper and a smidge more of the coriander and a little less nutmeg. ALSO, if in America making this recipe, use the gram measurements. 180g of the breadcrumbs is 2 cups, not one, even though websites may give that equivalent. It’s always best to weigh ingredients. I got a digital scale that does both ounces and grams/kilos and I use it all the time especially for recipes from back home. Anne From DC 🏴󠁧󠁢󠁳󠁣󠁴󠁿🇺🇸

    In the southern U.S. we use the exact same blend of meats, bread crumbs, and the same spices to form a loaf. Instead of chilling and slicing we bake the entire loaf at 175c for one hour. We then slice it and use it in exactly the same way you do. I have half a loaf in the fridge right now. This is a recipe that has been transferred exactly from the old world to the new, except we precook it. We call it "meat loaf".

    My mother, from Scotland, used to by this at the Scotch butcher, in Paterson, NJ, USA. She would boil it with cabbage, potatoes and onions and called it "Irish stew". I've never had anything close to it in years. I'll give this a try.

    We do get the slice sausage here, albeit the colour sometimes is a funny shade of grey, I suspect there is too much fat and not enough meat in the sausage. Thanks Cheryl for teaching us how to make them from scratch. My folks used to stew the sausage with onion and gravy.......and also links too........Oh! Hells bells ...I'm starving...Lol...next on the list ...morning rolls Hahahaha!

    I made it last night and fried up 4 slices for breakfast!!! Such a wonderful dish!!! I live in the US and used matza instead of the butchers rusk and it work great. I have made a few of your dishes and they are all excellent!! The meatballs in gravy are exceptional!! I'm a great fan of Scottish cuisine and am so happy for this channel. God bless you!

    I love mines with a buttered well fired roll, sausage has to be crispy on the outside and softer in the middle, tomato sauce and either a mug of tea or a glass of irn bru. I now live in England and every year my Auntie Anne will bring some down from Kilsyth, so nice.

    I came to see how to fry lorne sausage - I have store-bought - but I learnt much more! I didn't know it would be so easy to make this at home. I'm in love with lorne sausage since I moved to Scotland 10years ago. I'll be sure to share this recipe with my mum back home in Hungary - she started learning English after she visited me here and liked Scottish food!

    Hello Cheryl. Thanks a million for this wonderful recipe. I made it just as you prescribed, and it got rave reviews. What I did put in to my Lorne Sausage which was not in your recipe was diced bacon piece, which was the coup de grâce. ps: as I could not get BUTCHER'S RUSK, I used PANKO which turned out just fine. Slainte!

    When I was in Dundee was Lorne, I stayed in Broughty Ferry for a year and what a great place for butchers( bootchers) and fishmongers, and the Sainsbury in Dundee great spice aisle.

    I'm a linguist with a fascination for dialectic variations and this presenter has all the credit for interesting and even charming variations of the basic English pronuciation as spoken in Scottland. It's simply nice to hear her speak. She charms you with her easy pronunciation and speech to the point where you like listening to her, just to hear her speak. If you live in the U.K. you have English accents, Welsh accents, Scottish accents and Irish accents and they are all English but they are all clearly belonging to a geographic area and unique to those parts. That's what makes the U.K. unique and great.! Can't say the same for the accent I was born with, namely, 'Cockny' which I never held in particular esteem. I spend my life pretending I'm from Cornwall or the Isle of Skye rather than be identified as a 'Gor Blyme' cockney.! I know, it's irrational but who said being rational was better than being from Radnorshire.? And trust me, if you play this game, you'd better get it right, because you have no idea how quickly you get caught out.

    Just had a square sausage in a bun today at work. I had it from my dear Scottish Canadian friend at work,for the first time, ever. Frankly it tasted way better than it looked. I personally thought the most delicious thing coming from the most basic ingredients. That comes in your video. I definitely will try this recipe and show off to him one day.     A wee tip for slicing it is to wet your knife before each cut , my favourite is Lorne and streaky bacon on a buttered White morning roll with broon sass 🥃🏴󠁧󠁢󠁳󠁣󠁴󠁿

    Thank you thank you thank you!!! My fiancé moved to the states from outside Glasgow and he really misses his square sausage! With the pandemic we haven't been able to get back like we wanted. His birthdays tomorrow and I'm prepping this tonight for his birthday breakfast.

    The recipe I found, before this one, didn't have the egg but I think I'll add it next time just for the moisture & binding. Great to see the recipes online at last. So hard to find in this area.     I live in the US-what is the difference between Tea and Dinner. I call the evening meal Dinner. Surprised that this is beef and pork, thought sausage would just be pork.
