I love how she was cutting with a saw knife directly into the palm of her hand. I was very young and decided to cut a piece of cheese the same way she did, but it went through, and I cut myself really bad, since then I have a butcher mesh glove for my left hand, I use it whenever I am cutting.

'Exhibit A' on why not to give knives to children. I bet you'd be fine now that you're an adult lol.

If you didn't want to sit through the video here's the tl;dw:
Good lime qualities: tenderness, yellowish light green color, smooth not rough skin
Bad lime qualities: Rough skin, dark green color, firmness.

When you get a dry/dark green lime, you could rolled up on the table pushing it and roll it, so you can extract more juice when you cut it.
Trust me I’m Mexican I eat them every day without exception.

You should do a video on Oranges the best one with lots of juice and no pith as big oranges have a very thick skin with thick pith

I always touch the limes before I bag them, if you found soft skin limes, doesn't matter, the color, they are juicy.
