This video explains how to determine the equation of a quadratic function from a graph. It used the standard form of a quadratic function and then write the standard form in general form.

It doesn't matter which other point we use. As long as the point is on the graph of the parabola, it will satisfy the equation. Pick any convenient point. I hope that helps.

I don't know if I'm just missing something but every other resource I have seen says that STANDARD form is f(x)=ax^2 +bx+c, and that VERTEX or TRANSFORMATION form is f(x)=a(x-h)^2 +k.

you meant x = -4 ?
that's because substituting that value for x was to find the value of a; also, the x could be any value, as long as it is a real number. -4 was just used because the point chosen was (-4,2)
