Can you do a video on transitioning from a home bakery to a storefront bakery? Things like where to buy bulk supplies in this size, larger equipment, hiring people, the logistics of getting started and what needs to be planned out before hand. I’m not sure if this type of video would even be possible but I’d love to hear your thoughts on this!
Working in a bakery for a few months will give you a better understanding of what you will need in terms of equipment and staff and maybe even suppliers than any course. Like really so many details that will help you be a successful business. Or I guess a better idea you could hire people with experience and knowledge of local suppliers and give them an added bonus for the input they give you for start up. Ask them what sort of machines they would recommend etc most will love to work with you on this regardless of the bonus. Your employees can definitely help you if you trust in them

So I’m a florist and a little trick I learned to open up a rose and make it look fuller is to actually flip it upside down and twist the stem back and forth. Might be slightly difficult with the tiny amount you have but it works wonders without damaging the flower! :)
Every time I try that, the petals fall off, do you know how to fix that? I’m curious because I’ve never had success with it, I might ask my mum though because she used to be a florist!

I’m a professional production baker who didn’t go to culinary school and honestly, if you really enjoy baking, you can teach yourself a LOT by just doing whatever you can at home. There are so many guides and tutorials by experts available all over the Internet for free-all you have to do is practice! Repetition builds skill, and it’s easy to do something you love over and over.
I think it would be nice to go to a culinary school just so you have an excuse to practice a technique over and over to get it right, if I did that at home there would be to much wasted food and spent money
I'm a highschooler that started a job as a prep cook with no commercial experience and I started last week. I've already learned so so much! In this industry its often more helpful to learn from already experienced people who work with you and experimenting yourself rather than going to like culinary school

Heres a tip for the flowers , if you put the stem in your palms and it give a spin, the petals spread out in a more natural way and it doesn’t disturb the bud as much as tugging , so they wont fall out as easily ☺️

I had a baking business back in the states and I can tell you the piping method for filling cupcake pans is WAY easier than using a scoop. A scoop is an excellent method for those who are just starting out or home bakers. But if you're baking in bulk, the bag method is SO much faster. You can fill a tray in a few seconds. You do it enough, you get a muscle memory so each pan would be filled with tye same amount.

This is legitimately my dream job, I started a home business if you can call it that when I was 12 with my friend. Called Caker Bakerz. We just did cupcakes. I want an all cupcake bakery, but then have fresh breads, thin slivers of fancy cakes like opera and fruit cakes, and then maybe some seasonal royal icing cookies. Seasonal cupcakes and cookies, but then have constant flavors all year round. I'd love to visit this place!!

They are both so efficient and bad ass!!!!! Quick question: when you have multiple layers of trays in the over do you have to switch them for even cooking? Also if you don’t have enough space for all the trays to go in the oven at once whats the best way to store the batter that is not cooking??
I think (and this is a guess), that she uses convection heating so it heats fairly evenly. The batter just sits for a bit, but never for too long because you’re filling and moving the trays constantly.

Absolutely LOVE watching you and Rachel work!! But I have to ask....is that baby's breathe fake that she put on that beautiful cake?? I'm sure you all know it is Toxic to people. But its just adorable to use with roses on a cake. So I'm wondering if yall have found fake baby's breathe to use. I found some at a craft store last year, but it just looked fake and it fell apart super easy.
Thank you! From my understanding, the bakery highly recommends not bringing baby’s breath in to put on their cakes, but all of the clients supply the bakery with their own flowers so the liability is on the customer if they still want the baby’s breath to go on their cake. I have yet to find a great fake replacement, but in general I find Michael’s does a good job!

Hi, Try using cling film to secure ends of flowers. If you wrap it tight it will not fall off like in 8.43. I use this method and always platic stays on flower when I remove it from the cake.
Really surprised there's no hair net with such long hair. Interesting to see how the food hygiene rules differ from country to country. It's a requirement where I'm from. *Edit - also just noticed the nail varnish. That's not allowed in catering here either. Interesting!
I would encourage everyone to eventually swap to the piping bag for filling moulds for several reasons: its cleaner and so cuts down on cleaning time; faster as the contents stays with you and you don’t have to waste time moving trays around; more efficient as with practice you’ll have more control over your batter quantity than with a scoop; less likely to get RSI as already mentioned in the vid. The only drawbacks are warming up the batter with your hands and the time it takes to fill the bag. But these are a plus as the bag actually encourages speed so the likelihood that the batter will warm up will become less simply with having that knowledge. The sheer quantity of cupcakes also means even though you’re using time to fill the bag, this time is made up by how quickly you’re able to fill those trays in comparison to the scoop. It takes more work to get quick at the scoop than it does to get quick with the piping bag. As an added bonus, you’re piping skills will improve exponentially with very little effort. I’m a musician and I remember just how easy pieces became to learn after mastering my exercises. And the time it took to learn a piece became quicker and more effortless (AND FUN) because of the time I spent learning exercises. Very efficient way of learning. Scoop skills are somewhat obsolete. ;-) [edit] I should mention this is clearly an owner who knows their business. Awesome!

Yeah! Two tone bags without a divider! I can do up to 5 colours (you have to for rainbow unicorn cakes) without a divider, but when my colleague helps out, she hasn’t quite gotten the trick of going through the whole bag without merging the colours. We’ll get there though. 😇
I didnt realize you were in surrey and ive tried a cupcake here. Very delicious when i tried a chocolate one in the past. It was very cool to see your staff work so efficiently and with so many details. It brings back good memories of working in the food industry.

They are both so efficient and bad ass!!!!! Quick question: when you have multiple layers of trays in the over do you have to switch them for even cooking? Also if you don’t have enough space for all the trays to go in the oven at once whats the best way to store the batter that is not cooking??
I think (and this is a guess), that she uses convection heating so it heats fairly evenly. The batter just sits for a bit, but never for too long because you’re filling and moving the trays constantly.

They’re 5.5” (diameter) baking cups! We buy them from a local wholesale company.

But I have to ask....is that baby's breathe fake that she put on that beautiful cake?? I'm sure you all know it is Toxic to people. But its just adorable to use with roses on a cake. So I'm wondering if yall have found fake baby's breathe to use. I found some at a craft store last year, but it just looked fake and it fell apart super easy.
Thank you! From my understanding, the bakery highly recommends not bringing baby’s breath in to put on their cakes, but all of the clients supply the bakery with their own flowers so the liability is on the customer if they still want the baby’s breath to go on their cake. I have yet to find a great fake replacement, but in general I find Michael’s does a good job!

Try using cling film to secure ends of flowers. If you wrap it tight it will not fall off like in 8.43. I use this method and always platic stays on flower when I remove it from the cake.
Really surprised there's no hair net with such long hair. Interesting to see how the food hygiene rules differ from country to country. It's a requirement where I'm from. *Edit - also just noticed the nail varnish. That's not allowed in catering here either. Interesting!

I don't think anyone in Australia uses anything other than fresh cracked eggs. You'd never see eggs from a box
I would encourage everyone to eventually swap to the piping bag for filling moulds for several reasons: its cleaner and so cuts down on cleaning time; faster as the contents stays with you and you don’t have to waste time moving trays around; more efficient as with practice you’ll have more control over your batter quantity than with a scoop; less likely to get RSI as already mentioned in the vid. The only drawbacks are warming up the batter with your hands and the time it takes to fill the bag. But these are a plus as the bag actually encourages speed so the likelihood that the batter will warm up will become less simply with having that knowledge. The sheer quantity of cupcakes also means even though you’re using time to fill the bag, this time is made up by how quickly you’re able to fill those trays in comparison to the scoop. It takes more work to get quick at the scoop than it does to get quick with the piping bag. As an added bonus, you’re piping skills will improve exponentially with very little effort. I’m a musician and I remember just how easy pieces became to learn after mastering my exercises. And the time it took to learn a piece became quicker and more effortless (AND FUN) because of the time I spent learning exercises. Very efficient way of learning. Scoop skills are somewhat obsolete. ;-)

Yeah! Two tone bags without a divider! I can do up to 5 colours (you have to for rainbow unicorn cakes) without a divider, but when my colleague helps out, she hasn’t quite gotten the trick of going through the whole bag without merging the colours. We’ll get there though. 😇
