Any way of doing something similar to this but with a gas grill? Don't have a smoker yet?
Yes, if you can get your grill to a steady 275 deg (or close) and you can get your meat over indirect heat. You just miss out on the "smokey" flavor.

Working on: Smoked & Roasted Garlic, Avocado Grenades, a YETI Tumbler review, Bacon Wrapped Jalapeno Dogs and Zombie. That's right, how to smoke Zombie meat. Hopefully life goes according to plan and I can get these filmed, edited and released.
Oh yeah, and trying to find the time to convert a wine barrel into a cold smoker to things like cheese and salmon.

Nicely done. Last time we tried these the final glaze was maple syrup and sriracha sauce, that same sweet heat you were after but no artificial bbq flavor from the Sweet Baby Rays. Thanks for sharing.

My costco carries that same cut of meat and I have been making excuses for not buying it. Now I have NO excuse! I have to ask, are you a fan of Steve Raichlen? Well, actually, I think that high fat *IS* heart healthy. Carbs are the villain, not fat. This is great news, as fat can be delicious.
