@@bobtehdinosaur people don't understand the huge commitment and investment to make great food but often we find people expecting McDonald prices on the menu. I'm NOT saying you're saying this but a big percentage of people expect it. Corporate franchises control cheap inventory to make it possible, something a independent business can't do, and not mentioning they get special pricing for restaurant equipment and banks gladly offering their money with special low rates. Real estate is a giving for big corporate. What it comes down is how much you are will to pay for a meal... Most of the time prices are driving by the competition and most, if not all, people expect to see those prices. The most I hate about this is hearing ignorant customers "but in Chipotle blah blah low prices", and so, before you know it local businesses close their doors. And their goes all your investment and time all to sell great food. It seems to me people are not willing to spend for better food, they are willing to spend for convinience and cheap food, and that's the case for most people.... If that weren't the case then why is McDonald's, Wendy's etc etc etc... Franchises so damn successful... Because that's what people want.
In my experience when smoking a brisket, when resting, the longer you let it rest the better. I’ve let a brisket rest in the oven on the lowest setting for up to 16 hours and that was one of the best briskets I ever made. That long rest let’s it come down to serving temperature and absorb all those beautiful juices and flavors back into the meat! Absolutely delicious!
In Korea they don't have the best meats. To counter this they use countless sauces to mask the flavor of the meat. You could have done the same seasoning with cheap $1.99 chicken cooked for 45 minutes and yielded roughly the same results.

that bearly had bark on it and you wrapped it in foil which destroyed what ever bark you had... it didn't up juicy either, did you not let it rest for 1 hour+? not traditional Texas style..
