  • Potoler dorma: The Bengali dorma is said to be a local evolution of the Middle Eastern dolma, which is part of the Ottoman cuisine. Dolma was possibly brought into Bengal by Armenian immigrants. If you are interested in the fascinating history of the Bengali dorma, you can read Tanushree Bhowmik's well-researched post here:
    🔗 go.bongeats.com/dorma
Dorma can be made with a variety of vegetables, although the one made with potol or pointed gourd has become most popular among Bengalis. The stuffing can vary widely and traditionally includes dried fruits (and sometimes nuts). We have a niramish (without onion or garlic) version here that uses ground Bengal gram, and an aamish (non-vegetarian) version with fish and prawns. Non-vegetarian stuffing can include dried fish (shutki) or meat, while vegetarian fillings can be made with chhana (cottage cheese), rice, or other vegetables.
00:00 to 02:53 Scoop out the potol
02:54 to 05:50 Vegetarian (dal) filling
    05:51 to 10:25 Non-vegetarian (fish) filling
    10:26 to 15:12 Dalna/gravy

When it comes to cooking video channels, Bong Eats may have a little bit of less subscribers than other famous Indian cooking channels. But the amount of hard work they put in each and every video like mentioning the quantity of spices needed, the time needed for cooking certain dishes, and other tiny details to make the dishes perfect and as it should be makes Bong Eats the perfect cooking channel... Others may have some more subscribers but they stand nowhere close 2 Bong Eats in terms of photography, quality of video, the subtle music that makes us crave for the dishes.. Guys, u r the best and thanx for putting Bengali food in the global platform in a professional manner!

What is your family's favourite stuffing for dorma?
    🧄🧄🧄
    CORRECTION!
Unless you are chasing vampires do not use 100g garlic, as mentioned in the video. Please use only 10g. It was a typo. 😩

In our family Potoler dorma is mostly a Saturday special dish, hence "Niramish". We use grated paneer after a quick fry with raisins, peanuts and Gorom Moshla. Each Potol has to have 3 raisins and 2 peanuts ; )

Potoler dorma or Dolma , traditionally, is slowly cooked in postobata , yougurt and onion paste gravy and the maacher pur should be only chopped-prawns fried with onion-garlic-ginger paste and kaju-kishmish with a hint of garam masala powder ... As long as I knew from my grandmother...
