is it possible to have a particle system that shoots out the empties that trigger this effect? When I try it doesnt work. Probably because the particle is like a copy of the real empty, but the nodes are not applied on these copies.
Not really with this method. You could send the particle lasers at the sheild, make the sheild kill the particles and then hand animate the 1 empty moving back and forth around the sheild to fake it. It would work just as well most likely and be much easier to work with.

Great Tutorial - and so simply explained. I tried to purchase on Gumroad, but could not identify which of the options contained this project file? It doesn't behave the same on Blender 3.0 even with every setting identical to yours above.

You can really start with just a laptop with an AMD or Nvidia graphics card and intel processor of at least i6.That should give you some nice results. LMK if you have more questions.
As you said, if you have a Color Ramp and you want to brighten it up without changing the color, there are a couple of ways to do that - you just forgot to mention the first and easiest method: in the Principled BSDF (just like in the Emission Shader) you have directly below the Emission Color a value for the Emission Strength. Just increase this and you don't have to plug in any other nodes or play with the vibrancy...

Because your Deflector Shield effect looks really cool, but I'm trying to figure out how to achieve it that the shield reacts to the laser only after it got hit and not already at approaching it... any idea?

I think if we do some text and other stuff effects in blender I would use after effects less
