I’ve got the big EBMX 72v 57Ah stainless case, potted, 2 year warranty and they sold over 2000 batteries now! Good to see that people are preferring paying a bit more for a proper battery instead of cheap heatshrink packs

You touched on it at the end, but there is a place for heat shrink builds when inside another container like a frame or other enclosed box.
exactly. I heat shrinked mine AND put it in a stainless steel container.
Fibreglass then heatshrink then Stainless is the way to go

Why do you need that much range? My EBMX 72v 57Ah is an absolute beast, 4.2kWh on a lightweight Surron you get a mega range
The full size Surron Storm bee is 4.3-4.4kWh and much heavier bike

If that's a chi battery (this one specifically, not talking about heat shrink packs as a whole) it's ancient
BMS FW engineer here: Reusing the BMS with different cells is a safety risk. Basically, the BMS is designed to enforce the max charge and discharge current with respect to temperature, while also enforcing cell voltage min/max limits. The limits are different for each cell, so it's possible the new cell could be operated outside of the recommended conditions. Given than li-ion cells can emit fire in addition to current, it's usually a good idea to stay within the recommended parameters from the cell datasheet unless your use-case has been evaluated by the cell mfg.
Battery should be at least IP67 or not allowed to be sold …
