You do a great job, Luke - filming and telling the story of the culture. This is what life truly is all about. I wish everyone appreciated the cultural complexities and respected the traditions of those cultures.
Thank you for making this video. I was born in Changhua. I have been living in Canada for 28 years. This video brings me tears. I miss my grandma and the thin noodle soup she had always made for me ❤
Oh my goodness watching them making those noodles was mind blowing 🫢 that is skill and precision as well as very hard work. Much respect to them and those look so delicious.
Awesome video, Luke. The barefoot noodle making was totally brilliant - so cool seeing behind the scenes of authentic food making in that way. Love it!
Thanks for another fun video, Luke. I'm planning a trip there next year, so i'm super glad that we're seeing a lot more of Taiwan these couple of weeks.
It's PM 9:45 now in Japan...I was getting sleepy but the notification sound woke me up and the noodle in the video made me crazy hungry 🤤🤤🤤 Ah... the angel and the devil inside me began fighting... ah...now both guys got so hungry in the end and they decided to persuade me to make some cup noodles🤣🤣🤣 Every food in this video looks amazing... and they are beautiful too. Thank you so much for taking me on a short excursion to Taiwan😃 Stay safe guys!! From Japan.
The earliest written record of handmade noodles is in the Eastern Han Dynasty, and the taste is different from the noodles made by machines. There are two kinds of Cow Tongue Cookie in Taiwan, Lukang ones are softer and thicker, while Yilan ones are harder and crispier. Oyster Omelette is also called Taiwanese pizza by foreigners, which is the most traditional night market snack in Taiwan. Lukang Old Street is located in Lukang Town, Changhua County. The number of historic sites is second only to Tainan. Thanks a lot for sharing!
That paper statue is so delicate and exquisite, really can't believe that it's actually made with paper🤩by the way I think filling inside the cow's tone cake is malt sugar, in Taiwan it's widely used in many traditional sweets. Now I kind of feel ashamed that I don't think I've ever been to Lukang even as a Taiwanese😅

It was interesting to see how those thin mian xian noodles were made. And, how they looked once served. It's interesting too, given the care and precision required to make them, that the noodles get so little spotlight at the end. They're embedded into that thick, gloopy broth and become texturally lost. But, very interesting. Also, in Southern China and Hong Kong, there is something called "ox tongue pastry." It's similarly shaped, more plump however, is doughier, and is kind of like a youtiao, the famous Chinese fried cruller. It's eaten, I'm assuming, much like a youtiao.
Hi Luke. I think your video fans will be happier if you include the price of the food you ordered and give your rating from 1 to 10. Success always GBU.
hate to break it to you folks, that noodle stretching isn't any different from handle pulled noodles that you can do at home. the reason they do it that way is to increase production before machines came along
Before the machines were invented. All the Chinese noodle was pulled by hand. But the noodle shown here is a different type of noodle from the regular hand pulled noodle in that it is ultra thin. The direct translation of this noodle in Chinese is noodle thread. Usually it is eaten during the birthdays to symbolize a long life.
I think the reason the sauce is so gloopy is because the probably used potato or tapioca starch. I have used both and my sweet and sour turned out gloopy like that if you thicken to much

I can only imagine the dirt, fungus, cat crap, and bugs that get on the noodles when stretched outside on the patio. The food is probably pretty good if you don't mind the snotty texture and if you don't think too much about what you are eating.
Relatively new subscriber, wonder how often you get food poisoning from street foods? As an American, I see all these ingredients sitting unrefridgerated and would be afraid.
I would not be able to eat the oyster omelet. The "snotty" texture would gag me. I have sensory issues and I'm pretty sure I would starve in that country, so I won't be visiting there.

Hi from Germany.
Since you've been on the road without your previous companion, your videos have gotten much better.
手工麵線是非常簡單但深刻的美味,尤其是單純煮熟後,只拌入豬油(或花生油或葡萄籽油)!
It's so nice to know that taiwanese people enjoy the same noodles. In the Philippines we call that noodles Mee Sua.
Mee Sua, exactly the same as called by local Taiwanese, is the southern Fukienese pronunciation for Mien Shein which is Mandarin.
@@mjccom Mee Sua serves as an echoe of our nations' shared past. It's an amazing rediscovery in the age of internet. Thanks to the food blogger.

Those noodles are really cool, I wonder if they cook them other ways like dry style, it feels like the texture goes to waste a bit in that thick soup
Not really sure of other ways but i know you can also have with squid!

You can pan fry it as well
經過長時間的台灣人嘴巴篩選,這種麵線配上這樣的濃湯,最被人們接受,希望有天你來吃看看。

Most of the food in Taiwan can also be seen in China, a lot of the food are brought to Taiwan by soldiers and their families after the war.
