    Foreigners might find this disgusting but this noodle is 3000 times more environmental friendly and healthier than mainstream factory noodles. Its gluten free, far less carb, no chemicals, such as preservatives, far less carbon footprint. Its local pride and many people loves this.

      I tasted this noddle and I HATED it for few reasons : the taste was bad due bitter and rubbery (stir-fry method) since it was made from Cassava instead of Flour/Wheat, also the color was really ugly like you can eat "Bihun" but real Bihun (Vermicelli) itself still better than this noddle.
      I have lots of Bihun and Mie Soa in my Food Storage for cooking weekly, Bihun usually cooked for rice substitution (made from rice flour) while Mie Soa for our family Birthday (Chinese Tradition).
      I know this food is intended for low-income and poor people, but the way they make the noddle is the reason why people hate them (no offense at all).
      If they can make this with better tool and machinery, it will be well-received because better Hygiene and Quality standard. Sure the price will be more expensive, but you have safe and better product.

    Rasanya kasihan melihat para pekerja merasa bangga dengan pekerjaannya yang diliput media, ternyata di persepsi asing bisa menghasilkan pandangan sebelah mata. Ya.. bagaimana pun.. ini adalah keragaman suatu budaya.

      Beberapa orang barat ga ngotak liat pekerjaan ini, mikirnya sapi dibuat kerja paksa. Mereka pikir animal abuse. Jelas jelas sapinya dikasih makanan segar, kandang beratap dan nyaman. Sapinya kerja tinggal dorong2, sisanya nyantai di kandang. Bodohlah. Ada lagi yang ngejek bilang kotor kerja pake tangan dan kaki. Emang sistem imun lu seburuk apa sih, orang nanti minya direbus lagi kok. Emang orang jaman dulu sebelum era industri kerja lu pikir gimana? Sumpah dah.

Kalo kritikan itu pasti ada, joroklah apalah mengingat pabrik2 di luar negeri yg sdh maju atau tradisional tpi lebih higienis dan maju karena emang negaranya udh maju dan lebih mementingkan kesehatan lagi tentunya. Seiring berkembangnya zaman, org ngeliat tradisional Indonesia kurang higienis tpi kalau masyarakat disitu sdh terbiasa ya gk ada kata jorok. Itu aja.     I tried the dish once. One thing I still remember is, how light the noodles were inside my body as it didnt make me bloated at all. Even when I got 2 or 3 portions of the dish, it felt really light. The soup is comforting and rich in aroma and taste!!! The noodles--gosh, chewy, light, absorbing the flavor of the stock perfectly. A treasure, for sure!

      I suspect the fact that it doesn't have gluten and it's quite filled with carbohydrates makes it very easy to digest, since we start digesting starch on the mouth.

      @@DJ_POOP_IT_OUT_FEAT_LIL_WiiWiiThe process used in making these noodles makes them nasty tasting and unsafe to those not used to eating them, only those that grew up with these noodles or that have eaten a dish heavily covered in other spices or sauces like these noodles, it’s not only inefficient but it’s also a health hazard to anyone not used to such food environments. and I mean come on, personally I think it’s disgusting but people have their systems and culture in their own homeland so I won’t hold that against them.

    Remember, this is one of the two remaining traditional factories that exist, meaning other factories except these two production houses are already using modern tools and standards. If you don't want to eat this noodle given how they're made "traditionally" have disgusted you, you can choose other brand, it's that simple. Beside, this mi Lethek is already available in the package including it's seasoning and different flavor you can pick from. This noodle is already made its' path to the market, though it's still in the range of local market. So, when you visit Jogjakarta, you have one more item you can bring home as souvenir. My parent have brought me several of this noodle with different flavor, and I enjoy it very much.

    As an Indonesian, I don’t mind that it’s ugly, but the process could benefit from a more hygienic approach. Maintaining heritage is not an excuse for the lack of cleanliness, and modernizing is not synonymous with the lost of traditional values either; just look at Japanese craftsmanship where they hit all the spots: traditional, immaculate, and with just the right amount of modern streamlining.
    And they don’t have to do it alone, local government could help arrange for things like investment and training. A better branding and a more varied application to different dishes would encourage the younger generation to appreciate it.

    the craziest part? some people looks at this and think it's disgusting but when italians, parisians, or japanese does it it's called artisanal. i personally love the simplicity, plus the fact that it's zero preservatives, the way food should be made. it's ancient traditions but alas, industrialization and the economy rarely favors them.

      Because the factory made noodles that she mention in the video is the noodles (Brand: Indomie) complete with seasoning ready to be served in under 5 mnutes. While the same raw rice flour noodles without seasoning that was made from the modern factory has the same price as this, around $1 for 2 pounds.

    What makes the stomping technique flawed? Some wineries (in Spain, Portugal, and most recently the Napa Valley, California) still crush their grapes by stomping them. Eating casava noodles and drinking wine don't bother me.

      for noodle industry, stomping is obsolete. most modern factory use giant (industrial scale) dough mixer. the diameter is almost the same as concrete mixer truck but have about 3x length
      main reason is efficiency. you can process more in a single batch

      Talking about stomping, in my home village there was a traditional factory that made a very delicious srimp paste (terasi) by stomping. My mom used to say that bacteria from the feet fermented the shrimp and give it's signature taste. We used to think of it as a joke, but, may be it's true.

    We have this kind of noodle in the Philippines that we call sotanghon and molo. It is made from cassava root also and serve in vegetables and a little bit of chicken or beef broth. Some put soy sauce in it and is served on birthdays and festivals. Another common tradition of Indonesia, Philippines, Malaysia and Thailand

      Yes, remember, our ancestors were once just from one tribe. They expanded and moved to diffrent lands. Even in hawaii. They ride special boat ships we call balangay, to move from one island to another. Thus forming southeast asia and the pacific polynesian lands.

    I hope this culture will never die. Look at the grandpas, they seem to be so proud of what they are doing. I wonder how it tastes as it look so healthy, it honestly look like pancit bihon noodles to me, we use that in the Philippines to cook pancit. I hope this stays and get a lot of consumer by being featured this way.
    To those who were disgusted by the way they cook the noodles, if you are consuming instant noodles every damn time, they are killing you more than this noodles. Those things are filled with preservatives and other unhealthy crap, while this noodles does not have them.
    Stop acting all neat and clean. These grandpas deserve all the respect in the world. This tradition must be preserved. I hope their factory will be modernized so that it can ease their work.

    Lots of people disgusted with the environment and how its made, and that's understandable. But as other has commented here, there are a lot more things people consume without having the slightest idea how they are made.
    I'm just grateful BI made this video and brings more attention to them. Doing things the old way in this modern world is far from easy.

      @@EMAN00619nah mate it’s not that bad, they cook it later, so it’s sanitary, you’d be surprised that insects and poop get into factories for things like sausages, it’s so acceptable that there is just a limit of how much poop and insects processed meat can have, like it doesn’t need to be free of it, just not have too much, and I’m talking that this is true in first world countries

      Exactly people don't realize that factories have requirements for food that will allow certain amount of by products like u said insects , poop and plenty of other things that may get in the food during processing. Most of the candy we eat has multiple insects in it without people even knowing. Even green vegetables can contain animal waste or other contaminates on the shelf from the farm they came from or factory. @@da4127

    I’m from America and I would love if our food were this quality. We have food that’s based on quantity over quality. To find this difference we have to pay twice the price of the cheaper version. This is amazing and I hope they continue to have success ❤

    As an Indonesian, not proud for saying this, but never tried this noodle because I'm today's years old for knowing this thing exists. The worst thing is, I come to Jogjakarta often for work, but mostly only ate angkringan. Will try this next time when I visit Jogjakarta.

A well known phenomenon regarding of this is the infamous "bali belly" where tourist most of the time gets diarrhea after eating local culinary while locals never have problems with it

    Observing the traditional production of Mie Lethek might seem 'disgusting' to some, but it's truly fascinating. I admire how each worker is passionate about their craft, cherishing the traditional approach amidst today's fast-paced modern world. . If the owner have a successor for the business hope it can improve cleanliness and add modern system to lessen the work labor for all worker without reducing traditionality touch. Love this 💛

      From my observation, the one area I would try to improve on is the drying method, since the batch would get ruined when it rains, there should be a way to help cover them up and let them still dry without getting wet. Having improved gasket when they cook again would be a minor change I'd make to help keeping the steam in the oven.
      Everything else I personally wouldn't change.

    This is what I miss so much! Mie Lethek....gluten free... No preservative.. No colorings.. Locals commonly cook it with traditional stove (no gas needed) .. Sooo friendly for aroma and stomach

    7:44 clarification: Indomie sells small, single portion (85g) packs for around Rp 3000, which is $0.2. Indonesia uses kilogrammes so they probably sell it in 5kg packs. If you do the maths, they sell it at 0.42 of the price of Indomie, counting the seasoning packs (probably where they get their numbers).
    The fact that they still survive after selling it below an industrial factory packed noodles is genuinely incredible.

    I lived in Bantul for almost 8 years before till last year. Our family loves this traditional noodles. There are not many street food court seeling this kind of noodles, but for what I see they are getting more popular in recent years. When I move out to other city, its hard to find this noodles. It's a delicacy, I must say, but it just doesn't get enough presentation in the current traditional culinary market, except from where it came from, Bantul. Perhaps when the two factories no longer operating, we would never see mie lethek again.

    The word "Lethek" is used in a color terms not shape
    We use "lethek" mostly when kids using bright color shirt but got dirty after they go outside playing physical games because of a dust or dirt or anything that darken the color of the shirt
    The example is:
    English: change your clothes! Its so "dirty"!
    Javanese: ganti klambimu! Wis "lethek" lho!
    Read it with angry mom intonation with sandals in her hand and ready to fly 😅

    Im from west Java thanks for the video bcs i never know this noodles,the process very traditional and maybe home industri.
    Hope someday i can't try to eat this noodles with authentic taste,so still proud some people still preserving the culinary heritage of the past.
    Maybe I agree with the title, and I think there are many factories that are more hygienic and use more proper machines. just remember this factory is located in the small village still using traditional method which is very manual, that's precisely its appeal.

    Saya malah respek sama owner-nya sih, bisa bertahan selama puluhan tahun itu hal yang sangat luar biasa untuk pabrik rumahan.
    Lagian ini aman kok, kan prosesnya dimasak sampe matang juga. Kalo mau dimakan juga direbus sampe matang juga. Jadi meski gak higienis proses pembuatannya ini sudah aman dikonsumsi karena bakteri/kuman sudah mati saat proses produksi dan masak. Plus, mie ini lebih sehat karena tanpa pengawet 👍

    What he need to keep the business is a more nationwide sale. He needs to be able to send those noodles to different region and also keep their demands. Because a lot of street food vendor use alternative and that is a plain egg noodle. It's cheaper than instant noodle but still more expensive than mie lethek. So, if he can supply to different region while maintaining the price, I think his business will still running just fine.

    This was fascinating to watch. In this ugly world of consumerism and factories it is nice to see that there are still some of the environmentally friendly traditional ways still going on. I hope they stay in business many a year.
    I saw another person commented on lack of cleanliness. I didn't see that myself. You don't have to be in a factory setting to be clean. In fact, if you knew what actually happened in factories you would find this method much more hygienic! People have just been brainwashed to believe factory settings are more hygienic but actually it is not true. It is the opposite.

    This is awesome. I hope this video helps them in some way. I hope the elder who owns the factory can give it to one of the workers who loves it as much as him and they can continue this tradition. It's a beautiful and rare thing in some many places now to have so much love and care of people in a food and real ingredients. I imagine your body feels really great when you eat something that has gone through such a process, getting sun kissed and passed with love through so many hands. Its beautiful.

      Im from Indonesia "instant" food is surprisingly expensive and is actually considered "rich people" food for the longest of time
      I remember how when i was a kid if a show want to picture someone as "rich" they will show them eating at a kfc or pizza hut lol
      And even now i can honestly say buying frozen chicken nuggets isn't economically viable for me, not because i cant afford it but because with the amount i pay for nuggies i can just buy proper healthy food from my local vendors

    Better equipment means better quality, yes I strongly agree.
    But it doesn't necessarily able to keep the taste and physical quality of the noodle the same. There are more aspects and factors that can make this ugly noodle stays "ugly noodles". A controlled pressure using machine may gives different result to manual feet/hand pressing since the finished result is fully depends on the experience of the labor's feeling.
    There's a comment here that also mentioned the making of wine that also uses feet stomping to crush the fruit. It's just some methods need to be that way to achieve a certain quality of a product.
    For hygienic concern, some parts indeed need cleaning, but again in certain food production some natural bacteria may be needed to achieve the desired result.
    And for the oxen, I may guess the workers take care of them since they take the trouble to feed and give the oxen time to rest when they show signs of fatigue. And without the oxen, their production may come to a halt too, so it'd be wise to keep the oxen taken care of.
    I'm well aware of animals abuse out there, so this statement doesn't mean I'm being ignorant with what happen to the animal well being.
    As a QC, I may judge and not judge this kind of production process. Food processing is a science but also an art.

      Also, notice how most workers are old people, probably one of the reasons why they still use the old method. Old people tend to hate changes, especially for something that has been passed down for generations. That's why the young generation needs to step in and change what needs to be changed. But sadly younger generation has no interest in this kind of thing. They like to have a 9-5 job rather than work like this.

    It's so delicious when cooked right. Tastes refreshing and less heavy compared to yellow noodles. My husband loves noodles and he's particularly picky about it, but we always eat this when coming back to my hometown. He never gets bored of it lol
